Kimchi Bokkeum Bap (김치 볶음밥)

This is the segment where I hunt down recipes and try them out, then go through step by step on teaching you the wonders that I picked up!
This way, when you get to Korea, you'll be able to eat comfortably as if you were eating at home!
I hope you're ready to waken those taste buds with the amazing flavors that Korea has to offer!

(Disclaimer~ I can't promise it'll look as delicious as that photo...... but it will taste delicious! :D)

Let's get some background info before we start~
There's 2 main ingredients we gotta talk about before we get cooking, and that is Kimchi, (김치) and Rice (밥)
Kimchi (김치) - Something that we either know what it is and have tasted it, or we don't know what it is exactly but have heard it being mentioned in countless dramas and by multiple idols.
김치 is pickled cabbage, often spicy depending on where you got it from or how you made it. It's created with a mix of garlic, salt, vinegar, chile peppers, and other spices that add onto its goodness.
Moral of the story here, 김치 is used as a side dish in every meal and is known to be the national dish of Korea and to be very healthy!
Yes, it has a unique taste and smell, but blending it with other foods really helps balance it all out so one can quickly get use to it!
(Trust me, the first time I smelled it, I was like 'WHAT ARE THOSE!?' ..... It was within the past year XD)
Rice (밥) - We all know about rice. Whether it's white rice or brown rice, or even fried rice, it is definitely something that everyone has tried at least once. We also know how heavily used rice is in Asian countries too because it's a stable food for over 50% of the world's population while wheat and maize haven't even reached those numbers since its discovery.
Basically, if you're more into pasta and bread, I highly recommend you start eating more 밥 because it's also used in almost every single dish in Korea with the different ways it can be transformed!

Ok~ Enough with the history lesson, let's get started! :D
Note: What you use and what I use may be different, but don't worry, substitutes are always a great way to expand your creativity in the kitchen!
I'll always try to stick to the original ingredients but if I don't have something, I'll substitute it, but it's okay, I'll let you know when I do!

Ingredients~

(Serves about 4 but I only made enough for myself and my sister)
4 cups of cooked rice (It doesn't matter if it's short rice or whatever, just make sure to cook it first!:))
7 oz of kimchi (I used the brand above but use whichever you have!)
5 oz ground pork (ATTN: I did not have unfrozen ground pork so I substitute for Spam..... :3)
1/4 of a carrot
1/2 an onion
4 eggs (The egg goes on top at the very end so if you're only making for yourself, then you can just use 1 egg. :))
4 tablespoons vegetable oil (I substitute it for sesame oil because I didn't have vegetable oil, but use whichever you have! Don't go out and buy a specific kind!)
1 tablespoon soy sauce
Salt and ground pepper for taste

Preparation~

Prep 1.~ Make sure you cook your rice before anything! Honestly, I love making white rice in large portions because then it'll already be ready to go next time I'm in the kitchen! :D
Prep 2.~ Chop up the kimchi into smaller pieces ONLY if your kimchi is in whole pieces.
Prep 3.~ Chop up the carrot and onion into bite sized pieces. Does it have to be perfect? Of course not! I won't go Gordon Ramsay on you if it's not extra fine! XD I just don't want ya'll to choke! D:

Directions~

Step 1 ~ Heat a large skillet over medium to high heat. Add the oil and chopped onions then stir-fry them until they start turning translucent. Then add the pork (In my case, it was Spam), carrot and kimchi.
Step 2 ~ When the pork is fully cooked, (Or when my spam was toasted evenly), add the rice and continue stir-frying. Lastly, season the dish with soy sauce, salt and black pepper.
Step 3 ~ In Another frying pay, fry the eggs sunnyside up format. Then when you serve yourself in a bowl, place a fried egg on top to finish it off.

The differences- My egg didn't want to cooperate, (~e.e)~ I had no pork so I used spam, ~(e.e~) And I didn't fry the rice, I just used white rice because I completely misread that part about adding it to the pan.... XD :/

As many production and manufacturing plants were closed due to lockdown, the shortage of raw material directly decreases the availability of oil products as per the preferences unlike before. The revenue generation by the company decreased due to lockdown as the demand for non-essential products decreases, therefore it leads to a decline in growth of the amaranth oil market. The COVID-19 pandemic has significantly hit the nutritional progress of consumers across the world. The persistence of the COVID-19 for a longer period has adversely affected the most vulnerable groups of the population. It continues to inflict the world with appalling economic and social dilemmas, capable enough to leave severe backlash on the economy for the next several years. The first wave had already inflicted severe blows to the population as well as the economy. The currently experiencing the second wave is expected to be more disastrous not only to the masses but also to food and beverages markets. The lockdown in various countries affected the import and export of various products that create the shortage of supply and due to the increasing demands of amaranth oil; there can be a price hike in various amaranth oil products.

Kpop is Actually Born from Korean Protest Songs
Alright so I'm a total history nerd, I majored in East Asian Studies and eat stuff like this up. Read the full (long!) article here - I will try to explain it basically, but its really worth the read. Here we go: It all started with Japan. As you might know, Japan colonized Korea eventually trying to erase Korean culture all together on the peninsula. In the very beginning though, that wasn't the case. Japan was willing to share Korean and Japanese culture, and the Japanese and Korean elite often spoke together and traded pop culture. Japanese elite brought over Western-influenced music because of their connections with the Western world (which Korea didn't interact with other than missionaries at the time) The Korean elite wanted to be modern and successful like Japan, so they adopted this music (called Changga) as their new favorite genre. (You can hear a lot of European influences in early Korean music...) This is where it gets interesting. The Korean elite wanted to be independent of Japan. They wanted Korea to stand alone as a strong nation, not pushed around by China or Japan anymore. They stared the pro-independence movement. Now, most revolutions like this would turn to traditional music, traditional culture to strengthen the country (for example, Korea would use ancient Korean songs to protest the Japanese occupation) but the Korean elite didn't! They wanted Korea to be strong, and to be strong they felt like they needed to modernize - ie be like the West. They used this Changga music (ironically brought to them by Japan) to protest Japanese rule! To this day Korea is always trying to "keep up with" the Western world so that they can be considered modern and powerful. Most things that they do is to modernize and stay trendy because that is how the country has always defined strength. But then, Japan decided to make money off of that... Japan had seen its first real pop music hit in 1914. People were buying records, following tabloids, and really getting into pop culture. That was really the birth of the Japanese music industry. In 1926, Korea had a similar experience. A song called the "Death Song" appeared, sung by Yun Shim-Deok. The singer committed suicide with her lover right after the song was released and the story made HUGE headlines. It was chilling, 'romantic,' and dramatic. Korea ate it up. Japanese record companies came in and started selling the record, selling over 50,000 copies! (In 1926 that number is totally insane!) You can listen to the death song here: The record industry after that was run mainly by the Japanese yakuza and their partnered Korean gangsters. The industry was set up very similar to how it is now, with entertainment industries doing everything in-house (SM has specific song writers that only work for SM, and their artists are actors, singers, models, etc) This is also why so many Kpop artists become actors...because even back in the 1920s musicians couldn't make enough money so the real way to make a living was through acting. That still stands today. So, today's Kpop is based off of this first "Korean pop" hit (the death song) AND protest songs against Japan. So when people say that Kpop is just a copy of Western music, they're sort of right but not in the way that they're thinking. Yes, its a reflection of Western culture, but the reason behind it is that Korea has been fighting to be recognized as a modern, powerful force to be reckoned with since the early 1900s. They want people to know Korea is strong, modern, and a country to look up to, not look down upon.
