Thực hiện: Bước 1: Thịt rửa sạch, bỏ hết gân, thái dọc thớ, cắt hình quân cờ cho vào nồi nước đôi sun khoảng 3-5 phút. Sau đó vớt hết bọt ra, đổ thịt ra rửa lại bằng nước lạnh. Bước này nhằm để loại bỏ mùi hôi của thịt. Bước 2: Ướp thịt cùng nước mắm, đường, tiêu, hành khô cho thấm. Bước 3: Cho thịt và 2 bát con vào nồi đặt lên bếp ninh nhừ, cho thêm thanh quế để tạo mùi thơm. Đun khoảng 30-45 phút đến khi thịt keo lại, lượng nước trong nồi chỉ còn 1/3 bát ăn cơm. Bước 4: Gắp thịt ra cho ráo, nước luộc thịt cho ra bát riêng. Xé thịt thành những sợi nhỏ. Bước 5: Cho thịt vào chảo đảo đều cho vàng. Trong quá trình đảo châm thêm nước luộc thịt để ruốc không bị khô. Có thể nêm lại gia vị sao cho vừa miệng. Lưu ý chúng ta không để lửa to, chỉ để lửa liu riu để thịt vàng đều. Bước 6: Nếu không có thời gian dùng cối giã thì bạn có thể cho vào máy xay sinh tố sử dụng nút nhấn nhả, ấn khoảng 3 giây rồi thả ra, lắc máy để ruốc không bám vào dao rồi lại ấn tiếp. Lặp lại động tác này nhiều lần như thế. Với cách làm này ruốc vẫn bông và dài sợi. Lưu ý không ấn trong thời gian lâu không thì sợi ruốc rất vụn. Các bạn có thể tham khảo sử dụng máy xay thịt làm ruốc để không phải giã bằng cối. Bước 7: Cho ruốc lên chảo đảo lần 2. Trong quá trình đảo cho thêm ít dầu để ruốc được bóng đẹp mà không bị khô. Đảo ruốc cho đến khi được màu vàng như ý thì tắt bếp. Ruốc thịt để nguội cho vào hũ kín dùng dần. Với cách làm này bạn không phải mất nhiều sức và thời gian như dùng chày để giã mà ruốc thịt vẫn bông, ngon và đẹp mắt. A tomato-yoghurt sauce is spiced with chilli, ginger, garlic, and garam masala, the universal Indian spice blend. The chicken is marinated overnight, grilled, and then gently cooked in a slightly smoky gravy. You will want to serve this dish over basmati rice with warm naan bread for soaking up the gravy. 4. Rogan Josh (Red Lamb) The literal translation for Rogan Josh, the name of this recipe from Kashmir is "red lamb." The colour comes from Kashmiri dry red chillies. While the name of the dish may sound hot, the warmth of the dish is toned down by the cream that is added at the end. The long list of spices called for in this recipe, but it is available in the local market of your city. Spices such as cardamom, turmeric, cumin, and garam masala are often sold in small bulk quantities, so they'll last for quite a long time. 5. Naan (Leavened Indian Flatbread) Naan, a puffy flatbread, is a staple in the Indian dishes in Malta and can go with everything you make, including many traditional dishes like tandoori chicken or all kinds of kebabs. If you'd like the recipe, message me 😘 My bun recipe: -200g milk (Lukewarm) -5g active dry yeast -30g sugar --240g bread flour -60g all purpose flour -30g butter (room temp) -Egg wash Step 1: put lukewarm milk, sugar and yeast in a bowl. Whisk and set aside for 5min Step 2: in a separate bowl, combine bread flour and all purpose flour. Then add milk mixture. Add a pinch of salt and knead dough Step 3: after dough can take ball form, knead in the room temp butter. Knead until butter is fully incorporated. After incorporated, put in a lightly greased bowl cover with plastic wrap and set aside in a warm place for 30-40 min. Step 4: after 30-40 mins, take dough out. It should have doubled in size. Put flour on your finger and poke the middle of the dough. If it first bounce back, declare the air from dough and cut in 8 equal pieces. Form in to balls and set aside on a baking sheet for 10-15 mins. Make sure to cover with a lightly dampened cloth. Step 5: cut two areas on the doughball across from each other in a diagonal direction. Egg was the parts you cut in to. Sprinkle with sugar cover them again with a lightly dampened cloth and let them rest for 30 mins - an hour. They will double in size again Step 6: bake in an oven preheated to 400° for 10-12 mins and you're done! Chocolate pudding filling: -2 egg yolks -2 1/2 tbsp sugar -1 tbsp all purpose flour -1 1/2 tbsp corn starch -1 tbsp coco powder -200ml milk (hot) -2 tbsp butter -30g chocolate. I used four squares of semi sweet chocolate Step 1: whisk egg yolks and sugar together. In separate bowl, combine flour, corn starch and coco powder. Add mixture to yolk mixture and whisk together. Step 2: slowly add hot milk to the chocolate yolk mixture. When fully combined. Put yolk mixture through a strainer into a pot. Out put on burner and set to medium heat. Continuously whisk until mixture thickens to pudding consistency. Step 3: take off heat immediately and add butter and chocolate. Continue mixing until chocolate and butter mix in. Step 4: place plastic wrap directly on pudding and put in fridge to cool. After it cools, mix it again and add to piping bag.
Caramel Stuffed Chocolate Chip Cookies
These look simply incredible. Two of my favorite things, chocolate chip cookies and caramel, combined into one heavenly cookie creation. I was looking for more caramel recipes (because that's what I do in my spare time, duh) when I found this recipe from Table for Two. I mean, can you even imagine anything more perfect?!? Look at that gooey, warm caramel. Those molten chocolate chunks. That perfectly chewy cookie. Imagine how good these are fresh out of the oven. Caramel Stuffed Chocolate Chip Cookies Prep Time: 10 min. Cook Time: 13 min. Difficulty: Easy Recipe adapted from Table for Two Ingredients 3 sticks (1½ cup) unsalted butter, softened 1½ cup dark brown sugar, packed ½ cup granulated sugar 2 eggs 4 tsp. vanilla extract 2 cups all-purpose flour 2 cups bread flour (you may use all-purpose flour instead if you don't have it on hand) 4 tsp. cornstarch 2 tsp. baking soda 1 tsp. salt 1½ cups chocolate chunks ½ cup dark chocolate, finely chopped 18 caramel candies, cut in half to give you 36 Directions 1. Preheat oven to 350°F. Line baking sheets with parchment paper. In a large bowl, whisk together the flours, cornstarch, baking soda, and salt. In another mixing bowl, cream together butter and sugar until fluffy (about 2 mins). Add eggs and vanilla. Beat 2 more mins. 2. Gradually add flour mixture, beating until fully incorporated. Fold in chocolate chips with a spatula. To form the cookies, take a spoonful of dough, and use your thumb to make a small hole and press the caramel into the center. Re-roll the ball to cover the caramel candy. 3. Bake for 11-13 minutes. They may look quite soft at this point, but remember they will continue to cook after you remove them from the oven. OMG Samoa Brownies – Girl Scout Cookies Gone Wild
Somebody pinch me. Am I dead? I must be dead. Because I am IN HEAVEN. These Samoa Brownies, brought to you by Broma Bakery, are all I've ever needed in a dessert: gooey chocolate brownie, toasted coconut, and sweet caramel. I thought Samoa girl scout cookies were as good as it gets – and then I met these brownies. Samoas Brownies Recipe by Sarah Fennel at Broma Bakery Ingredients For the brownies: ¾ cup cocoa powder 1½ cups sugar 2 eggs 12 tablespoons unsalted butter ½ cup all-purpose flour 2 teaspoons vanilla extract ½ teaspoon salt ½ cup bittersweet chocolate disks 1 teaspoon brewed coffee (optional) For the coconut caramel: 1 cup granulated sugar 6 tablespoons unsalted butter, room temp, cut into tablespoons ½ cup heavy cream, room temp 2½ cups sweetened, shredded coconut For the chocolate drizzle: ¼ cup chopped bittersweet chocolate 1. Brownies: Preheat oven to 350°F. Line an 8"x8" baking dish with parchment paper and set aside. In a microwave-safe mixing bowl, melt the butter. Stir in sugar, eggs, vanilla extract, salt, and optional coffee. Once combined, fold in cocoa powder and flour. Toss in bittersweet chocolate disks. Pour the brownie batter into the baking dish, spreading evenly to the edges. Bake for 35 minutes, or until a knife inserted in the center of the brownies comes out clean. Remove from oven and allow to cool for 15 minutes before topping with caramel sauce. 2. Coconut Caramel Sauce: While the brownies are baking, make your coconut caramel. In a medium saucepan, heat the sugar on medium-high heat for about 5 minutes. Use a spatula to occasionally stir the sugar, getting to the bottom of the pan. At first the sugar will be lumpy, but will soon melt and start turning a brownish color. Don't stir too often, just enough to keep everything evenly cooking. After 5 minutes, the sugar should become fully melted. Once it becomes a dark amber hue, remove from heat immediately and stir in butter. The mixture will violently bubble. You're doing it right. Use your spatula to stir the butter and sugar until they melt together completely. This can take 1-2 minutes. Next, pour in the heavy cream and sea salt. You can use 1 to 1½ teaspoons, depending on how much saltiness you like. Use your spatula to stir until everything is combined. Place back on the stove for about 30 seconds, stirring the whole time. Remove from heat. Stir in coconut flakes. Set aside until brownies are cooled. 3.) Assemble the Brownies: Once the brownies have cooled for 15 minutes, run a knife along the edges so they don't stick to the pan. Spread the coconut caramel on top of the brownies. Again, run a knife along the edges to prevent anything from sticking to the pan. Heat the drizzling chocolate in a microwave-safe bowl in 30 second increments. Stir in between each heating. Spoon melted chocolate into a small ziplock bag, creating a makeshift pastry bag. Cut a small (tiny!) slit at the bottom corner of the bag. Drizzle the melted chocolate over the coconut caramel. Chocolate Chip (Perfectly Safe!) Cookie Dough Truffles
About two weeks ago, @vegantraveler posted the most hilarious card in her Vegan Laughs that really got me thinking. It had a picture of a vegan baker licking cake batter off a mixing whisk and bragging about how vegans get to eat all the batter they want! (Check it out over here: http://www.vingle.net/posts/586948-Why-I-love-Vegan-Baking) And it's true! While admittedly, I haven't been vegan or vegetarian in years (gasp), I do still eat vegan and vegetarian foods regularly and appreciate the added safety in plant-based recipes. With no egg, no meat, and no dairy, there's less risk of foodborne illnesses and a much longer shelf life. (It's also perfect in a potluck situation when you know it's going to be left out for a long time!) With that being said, you can share and enjoy these cookie dough truffles (made with vegan cookie dough) without all of the concern that usually comes along with eating raw dough. One of my sister's favorite activities to do each holiday season is make a huge batch of vegan truffles for friends, and this is certainly our most favorite! --------------------------------------------------------------- Chocolate Chip Cookie Dough Truffles 2 1/2 cups all purpose flour 1 teaspoon salt 1 cup (2 sticks) vegan butter or margarine, room temperature 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 teaspoon vanilla extract 1/3 cup soy or almond milk 1 cup mini semi-sweet chocolate chips 14 ounces of meltable chocolate (Ghiradelli and Godiva both make vegan melting chocolate, but other natural food brands do too.) 1. Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy. Add cream and vanilla. Stir in flour and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips. 2. Cover and chill dough for 1 hour. 3. When dough is firm enough to handle (it may help to lightly flour your hands), form dough into 1" balls and arrange on a baking sheet lined with waxed paper. Place sheets in freezer and let chill for 30 minutes. 4. Melt chocolate candy coating in a double boiler or in microwave according to package directions. Using forks or a dipping tool, dip cookie balls into candy coating to cover. Tap fork on side of pan to remove any excess coating, and return to waxed paper-lined baking sheets. Chill until set. Store, chilled, in an airtight container for up to 1 week.
