It's Sunday again, the weather was great, humidity finally down, and decided to take advantage by eating on the patio. Today's menu, Salmon & Roasted Zucchini & Broccoli with Quinoa mixed rice and freshly squeezed lemon orange juice. For the Salmon 1) season with salt, pepper, Italian seasoning, half lemon juice & olive oil. 2) mince some fresh garlic and place on top of the salmon. 3) fresh rosemary stems, just lay them on top For the Veggies *** Next time, I would just use cherry tomatoes & zucchini 1)cut veggies in large pieces 2) large bowl, add veggies, garlic cloves, olive oil, salt, pepper, Italian seasoning 3) Place them in an oven bake dish For the Rice *** I used a mixture of Quinoa, small grain couscous rice, mixed barely, wheat rice 1) 1/2 cup Quinoa 2)1/2 cup Couscous 3) 1/4 mixed rice 4) 2 cups of water 5) salt 6) herb seasoning Place the salmon and veggies in a preheated oven at 200 Celsius for 15~18min. We ate the salmon with horseradish. It was nice to eat something healthy and light again, lol.
SO happy that humidity is down...and finally get to enjoy the nice weather in koreaaaaaaaa! now it feels like summer!! but its quite chilly at nightime..
I know! I'll have to do more BBQs for the next few months. :)
