Steps:
· Toast the almonds with sea salt and olive oil. Set aside.
· In the same pan, dry roast the red chilli, channa dal and toor dal on a medium flame until the dals are golden in colour.
· Transfer to a plate to cool.
· Roast the coriander seeds and pepper until fragrant. Add the jeera at the end, and roast it till it starts popping. Let all the ingredients cool completely.
· Powder them to a fine powder in a mixer and it to the almonds and then store in an airtight container.

8. Honey Jeera Badam
Serves: 3
Steps:
· Line a large baking sheet with parchment paper.
· Place the almonds in a medium nonstick pan and cook over medium heat for 3 to 4 until lightly toasted
· Combine the remaining ingredients in a small glass bowl.
· Microwave at HIGH for 30 seconds. Add honey mixture to pan, and cook 2 minutes, stirring constantly.
· Arrange almond mixture on prepared baking sheet in a single layer; let stand 10 minutes.
· Break apart any clusters.
9. Haldi Mirchi Badam

Steps:
· Heat oil and add all the spices and seasonings.
· Add the almonds.
· Toss well. Cool and serve

Steps:
· Melt the chocolate in a clean bowl in a microwave oven along with the butter
· Fold in the almonds and cranberries into the melted chocolate
· Grease a tray with oil  
· Using a spoon to drop 1 tbsp of the mixture on the tray  to form individual portions of Almond Rocks
· Alternately, you can spoon the mixture into small moulds or small paper cups
· Chill until set.

· Add the almonds to a pan and sprinkle all the ingredients and toss or transfer them on to sheet and bake for 6 minutes in a moderate oven at 170 °C

· Pour mixture over the almonds . Toss well  and bake for 10 minutes at 170 °C.

Steps:
· In a bowl or micro wave, toast the poha for 2 minutes until crisp. Transfer into a clean bowl.
· Heat oil and roast almonds. Keep aside.
· In the same oil, add mustard seeds curry leaves, tumeric powder, and the kasoori methi
· Sauté for 30 seconds. Add the almonds back and mix for 1 minute.
· Season to taste.
· Add the poha and mix well.
· Serve with a nice squeeze of lemon juice.
19. Almond Pearls
Serves: 3
Steps:
· Toast the oats in a dry pan for 2 minutes. Reserve and cool.
· Heat the oil, add the mustard, cumin, and ajawin seeds. Add the curry leaves. Toss in oats, corn flakes, blueberries.
· Toast almonds in the same dry pan for a few minutes. Add the rest of the ingredients.
· Season with salt and spices.
· Finish with lemon juice and chopped coriander.
20. Saunf Almonds

Steps:
· Heat the oil,
· Add the spring onions, and saute for 1 minute.
· Add the almonds, salt, pepper, saunf, coriander powder. Season to taste.
· Garnish with chopped green chillies & coriander

· Saute the onions, ginger, green chillies in oil in a kadhai.
· Add the cinnamon stick, channa masala. Season to taste.
