Abby's Chocolate Creme Brulee Cookies

I can't think of a much better cookie than this For the Chocolate Cookie Dough: cashew cream: 1 cup cashews 1 teaspoon vanilla extract 1-2 tablepoons maple syrup or agave nectar 4 cups water sugar cookies 1 cup granulated or cane sugar 1 cup powdered sugar 1 teaspoon vanilla extract 1 teaspoon apple cider vinegar 1 teaspoon cream of tartar 1 teaspoon salt 1 teaspoon baking soda 3 1/2 cups all purpose flour 1/4 cup cocoa powder Extra sugar for sprinkling For the Chocolate Pudding Topping: 8 ounces silken tofu 3 tablespoons agave syrup 1 cup melted semi-sweet chocolate 1/4 cup almond milk 1 teaspoon vanilla 1/2 tablespoon coconut oil pinch of salt 1 tablespoon cocoa powder Instructions to make the cashew cream: Soak the cashews in the 4 cups of water for at least 4 hours or overnight. Drain the cashews from the water. Place the soaked cashews in the bowl of a food processor fitted with the blade attachment, along with the vanilla, maple syrup or agave nectar and 1 cup of water. Process until smooth (this could take up to 3-5 minutes, just keep going!) . You may have to stop the processor a few times in the process to scrape down the sides during the blending. Once the cashews are smooth, transfer to a small bowl and set aside. The cashew cream can be made up to 5 days or a week in advance. Just make the cream and store in the refrigerator until ready to make the sugar cookie dough. for the sugar cookies: Preheat the oven to 350 degrees F. Grease 2 cookie sheets or line with Silpat or parchment paper. Set aside. In the bowl of a stand or hand mixer, mix together 1 cup of cashew cream, granulated sugar, and powdered sugar until blended. While the mixer is still beating on low to medium, add in the vanilla, apple cider vinegar, cream of tartar, salt, cocoa powder and baking soda. Add in the all purpose flour, mixing until dough is blended throughout. Roll the cookies into 1 inch round balls and flatten as you place them on the cookie sheet, forming a small well in the middle of each cookie as you go. Bake at 350 degrees F for 8-10 minutes, watching them closely to ensure they don't burn. Set aside to cool. to prepare the pudding: Combine ingredients in blender or food processor, blend until smooth (chopped chocolate will leave some texture) and adjust flavors to taste. Chill for at least 1 hour. to assemble the cookies: Spoon 1/2-1 tablespoon of the pudding onto each cookie. Sprinkle 1 teaspoon (or more) of granulated sugar on each pudding topping on each cookie. Brulee with a kitchen torch until crunchy and bubbly, or watch closely under a 500 degrees F broiler for about 5 minutes.

Faking It On Valentine's Day
Here's a really cool idea for Valentine's Day: FAKE IT! For real! Guys can be either really lazy about V-Day or over-think it and determine to learn new skills, such as cooking, on one of the biggest hyped calendar dates in the year, February 14th. That's probably not the best approach to making the date night more than being memorable for being bad. Instead of trying to bake a cake or cookies, or dare yourself into making fudge, you could avoid a messy crisis and make your own Chocolate Dipped Strawberries. TRUST ME, IT'S EASY! You Will Need: Strawberries (washed and thoroughly dried) Candy Melts (pink and white) Chocolate chips (semi-sweet is best) Edible gold Edible glitter Edible embellishments (there's time to order from Amazon) Directions Melt the Candy Melts and chocolate (according to the package) in their own container/bowl. Dip strawberries into desired bowl and set aside. Drizzle a different color "melt" onto the dipped strawberries. Also, redip the strawberries in another "melt" at the tip and immediately dredge in edible glitter. Set these in a tray in the fridge and take out to de-chill a few moments before eating. These are fruity, gently sweetened with the chocolate and melts, and will look AMAZING with the edible embellishments! Gorgeous Valentines Day Baked Apple Roses!
Beautiful? Check. Easy to make? Check. Healthy? Hey, they're better for you than a box of chocolates. For a sweet homemade Valentines Day dessert, try something new – these surprisingly simple baked apple roses! To make 6 roses, you'll need: A muffin tin 4 apples, cored and sliced in half (leave the skin on) Juice of half a lemon 3 Tbsp fruit preserves (apricot, apple, strawberry – choose your fave!) 2 Tbsp water (plus more, for soaking apples) 1 sheet of store-bought puff pastry Cinnamon, to taste To see how to make them, check out the video below, or just follow these simple written instructions! Instructions adapted from Tip Hero! How to Make Apple Roses These delicious baked apple roses are a perfect way to impress your Valentine. Or woo them any day of the year! 1. Preheat the oven to 375 degrees F. 2. Take halved, cored, unpeeled apples and carefully slice very thin (see how in the video above). Put slices in a microwave safe bowl and cover with water. Add the juice of half a lemon. Microwave for 3 minutes to soften the slices and make them more pliable for rolling up. 3. In another bowl, mix together 2 tablespoons of fruit preserves and 3 tablespoons of water. 4. Roll out puff pastry and slice into rectangular strips about 2 inches (or a little less) wide. (Again, the video has better details on this part.) 5. For each strip, spoon a little of the fruit preserve mixture onto the dough and spread. Place apple slices overlapping along the length of the dough. Sprinkle with a little cinnamon and fold pastry dough up over apples. Finally, starting from one end, roll the entire thing up and place dough side down in a greased muffin tin. 6. Bake for 35-45 minutes.
