Hazelnut, Orange and Honey Biscotti

This light biscotti goes perfectly with tea Ingredients 220 grams (approximately 1 3/4 cups) whole wheat flour 120 grams (approximately 1 1/3 cups) hazelnut flour 5 grams (approximately 1 teaspoon) baking powder 1/8 teaspoon (pinch) of salt 190 grams (1/2 cup) honey 165 grams (3 large) eggs 2 tablespoons orange liqueur, such as Cointreau, or orange juice 5 grams (approximately 1 teaspoon) vanilla extract 2 tablespoons finely chopped orange zest 100 grams hazelnuts, toasted, skinned and chopped (approximately 3/4 cup chopped) 1. Preheat the oven to 300 degrees. Line a baking sheet with parchment. Whisk together the flour, hazelnut flour, baking powder and salt in a bowl. 2. In the bowl of a stand mixer, or in a large bowl with a whisk or electric beater, beat together the honey and eggs for 2 minutes. Scrape down the sides of the bowl and beaters. Add the vanilla, orange liqueur or juice, and orange zest and beat for another minute. Turn off the mixer, scrape down the bowl and beaters, and add the flour mixture. Mix in at low speed until combined. The batter will be sticky. Add the hazelnuts and mix until well combined. 3. Using a spatula or a bowl scraper, scrape out half the batter onto the baking sheet. Moisten your hands so the dough won’t stick, and form a log, about 12 inches long by 2 1/2 inches wide. Repeat with the other half of the batter. The logs can be on the same baking sheet but make sure there is at least 2 inches of space between them. 4. Place in the oven and bake 40 to 45 minutes, until lightly browned and dry. Remove from the oven and cool on a rack for 20 minutes (or longer). Place on a cutting board and slice thin, about 1/3 inch, either straight across the logs (for more, but smaller biscotti) or on the diagonal (for more traditionally shaped biscotti). 5. Place the cookies on baking sheets and return one sheet at a time to the middle rack of the oven. Bake 15 minutes. Flip the cookies over and bake for another 10 to 15 minutes, until hard and lightly browned. Remove from the heat and allow to cool. Yield: 5 dozen smaller cookies (cut across the log) Advance preparation: You can bake the logs a day ahead and slice and double bake the cookies the next day. Biscotti keep for a couple of weeks in a tin or a jar. Faking It On Valentine's Day
Here's a really cool idea for Valentine's Day: FAKE IT! For real! Guys can be either really lazy about V-Day or over-think it and determine to learn new skills, such as cooking, on one of the biggest hyped calendar dates in the year, February 14th. That's probably not the best approach to making the date night more than being memorable for being bad. Instead of trying to bake a cake or cookies, or dare yourself into making fudge, you could avoid a messy crisis and make your own Chocolate Dipped Strawberries. TRUST ME, IT'S EASY! You Will Need: Strawberries (washed and thoroughly dried) Candy Melts (pink and white) Chocolate chips (semi-sweet is best) Edible gold Edible glitter Edible embellishments (there's time to order from Amazon) Directions Melt the Candy Melts and chocolate (according to the package) in their own container/bowl. Dip strawberries into desired bowl and set aside. Drizzle a different color "melt" onto the dipped strawberries. Also, redip the strawberries in another "melt" at the tip and immediately dredge in edible glitter. Set these in a tray in the fridge and take out to de-chill a few moments before eating. These are fruity, gently sweetened with the chocolate and melts, and will look AMAZING with the edible embellishments! Salted Caramel Dark Chocolate Cookies
I can't tell if how much I love caramel should be cause for concern, or if everyone loves that sweet gooey goodness as much as I do. *shrug* What can I say? I know I posted a caramel-stuffed cookie recipe not so long ago, but I saw this one on Sally's Baking Addiction and simply could not resist. Dark chocolate cookies stuffed with caramel, sprinkled with large flake sea salt? Yes please. Oh, and these don't have just any old caramel on the inside. They're ROLOs. Isn't that ingenious?? What you'll need: 1/2 cup (115g) unsalted butter, softened to room temperature 1/2 cup (100g) granulated sugar 1/2 cup (100g) packed dark brown sugar (or light brown sugar) 1 large egg, room temperature preferred 1 teaspoon vanilla extract 1 cup (125g) all-purpose flour (measured correctly) 2/3 cup (58g) unsweetened cocoa powder 1 teaspoon baking soda 1/8 teaspoon salt 2 Tablespoons (30ml) milk 1 and 1/2 cups (270g) Nestlé® Toll House® Dark Chocolate Morsels 16-17 chocolate coated caramels, such as Rolos coarse sea salt 1. In a large mixing bowl, cream butter on medium speed for about 20 seconds. Add sugars and cream together until light and fluffy. Beat in egg and vanilla. 2. In another medium-size mixing bowl, sift together flour, cocoa powder, baking soda, and salt. Gradually add to wet ingredients until combined. Stir in milk, and fold in dark chocolate morsels. Let dough chill for 1-2 hours. 3. Preheat oven to 350°F, and line a baking sheet with parchment paper. To form cookies, take 2 tablespoons of dough, split in half, and stick a caramel in the middle. Roll into a ball, making sure caramel is sealed completely inside. Sprinkle with sea salt before baking. Repeat 16-18 times. 4. Bake for 12-13 minutes. Cookies will still appear somewhat raw, but they will continue cooking after you remove them from oven. Allow to cool on cookie sheet for 5 minutes before carefully removing to wire rack to cool completely. Bake for 12-13 minutes. Cookies will appear undone and very soft. Allow to cool on the cookie sheet for at least 5 minutes before transferring to a wire rack to cool completely. I am making these the SECOND I have some baking time in my schedule. I can't wait. For someone who loves to eat healthy and exercise, I sure can eat a lot of chocolate and caramel...
