I absolutely love rice pudding, can't wait to try this out Ingredients 1 cup of arborio rice 1 - 1/2 cups of half and half {or whole milk} 8 Tbsp sugar campaignIcon 1 tsp vanilla Instructions add rice to a medium sized saucepan add enough water to just cover the rice bring to a boil and cook for 5 minutes stir in the half and half and the sugar bring to a slow boil, stirring frequently simmer 35 - 45 minutes {if milk absorbs too quickly - you can add a bit more, just a few tbsp at a time} the rice should be soft and creamy, not hard and chewy at all. all kitchen appliances work differently, so taste and test the rice for doneness remove from the heat, stir in vanilla, or other spices {I love a little nutmeg in my pudding} serve warm
