Mini Meatloaves

I used to make meatloaf in one big loaf, but I’ve been experimenting with making it in muffin tins. Not only does it cut down the cooking time, but it also makes it really easy to watch your portion sizes, too! Needless to say, this is a hit! Ingredients: - 8 oz bread - 1 cup milk - 1 pound lean ground beef - 1 pound medium ground pork - 1 tsp salt - 1/2 tsp freshly cracked pepper - 1/2 tsp garlic powder - 1/2 tsp nutmeg - 1/2 tsp allspice - 2 Tbsp dried parsley - 1 cup grated asiago {or parmesan} - 1 large carrot, grated finely - 1 medium onion, grated - 4 eggs - 1 cup ketchup - 2 Tbsp molasses - 2 Tbsp honey - Hot sauce Directions: 1) Preheat your oven to 350F. 2) Prepare muffin tins (18 wells) by greasing lightly. 3) In a large bowl, tear bread up into small pieces. Pour milk over top and let sit for a few minutes. 4) To the bread, add beef, pork, salt, pepper, garlic powder, nutmeg, allspice, parsley, parmesan, carrot and onion. Mix well. 5) When the meat mixture is well-combined, add eggs and mix some more. Once everything is mixed together well, fill each muffin tin well with the meat mixture. 6) In a small bowl, combine ketchup, molasses, honey and chili sauce. Reserve half the sauce for later, and brush the remaining half over the tops of the meatloaf muffins. 7) Bake meatloaves at 350F for 25-30 minutes, until the internal temperature of the meatloaves is 160F. 8) Serve with fluffy smashed potatoes and the reserved sauce for dipping.

Beautiful? Check. Easy to make? Check. Healthy? Hey, they're better for you than a box of chocolates. For a sweet homemade Valentines Day dessert, try something new – these surprisingly simple baked apple roses! To make 6 roses, you'll need: A muffin tin 4 apples, cored and sliced in half (leave the skin on) Juice of half a lemon 3 Tbsp fruit preserves (apricot, apple, strawberry – choose your fave!) 2 Tbsp water (plus more, for soaking apples) 1 sheet of store-bought puff pastry Cinnamon, to taste To see how to make them, check out the video below, or just follow these simple written instructions! Instructions adapted from Tip Hero! How to Make Apple Roses These delicious baked apple roses are a perfect way to impress your Valentine. Or woo them any day of the year! 1. Preheat the oven to 375 degrees F. 2. Take halved, cored, unpeeled apples and carefully slice very thin (see how in the video above). Put slices in a microwave safe bowl and cover with water. Add the juice of half a lemon. Microwave for 3 minutes to soften the slices and make them more pliable for rolling up. 3. In another bowl, mix together 2 tablespoons of fruit preserves and 3 tablespoons of water. 4. Roll out puff pastry and slice into rectangular strips about 2 inches (or a little less) wide. (Again, the video has better details on this part.) 5. For each strip, spoon a little of the fruit preserve mixture onto the dough and spread. Place apple slices overlapping along the length of the dough. Sprinkle with a little cinnamon and fold pastry dough up over apples. Finally, starting from one end, roll the entire thing up and place dough side down in a greased muffin tin. 6. Bake for 35-45 minutes. Here's a really cool idea for Valentine's Day: FAKE IT! For real! Guys can be either really lazy about V-Day or over-think it and determine to learn new skills, such as cooking, on one of the biggest hyped calendar dates in the year, February 14th. That's probably not the best approach to making the date night more than being memorable for being bad. Instead of trying to bake a cake or cookies, or dare yourself into making fudge, you could avoid a messy crisis and make your own Chocolate Dipped Strawberries. TRUST ME, IT'S EASY! You Will Need: Strawberries (washed and thoroughly dried) Candy Melts (pink and white) Chocolate chips (semi-sweet is best) Edible gold Edible glitter Edible embellishments (there's time to order from Amazon) Directions Melt the Candy Melts and chocolate (according to the package) in their own container/bowl. Dip strawberries into desired bowl and set aside. Drizzle a different color "melt" onto the dipped strawberries. Also, redip the strawberries in another "melt" at the tip and immediately dredge in edible glitter. Set these in a tray in the fridge and take out to de-chill a few moments before eating. These are fruity, gently sweetened with the chocolate and melts, and will look AMAZING with the edible embellishments!
