Summer is right around the corner & honestly, what's more refreshing than popsicles? What makes this recipe so lovable is that it is healthier than your typical sugar laden popsicle. The yogurt gives this popsicle and creamy consistency, while the raspberries give off a fresh sour element! All made in a muffin pan hehe (: Who says you can only bake muffins with these useful tools?? Ingredients: - 1 1/2 cups raspberries - 1 cup orange juice - 1 cup plain, low-fat yogurt - 1 teaspoon almond extract - 2 tablespoons honey Directions: 1) Place all the ingredients in a blender and process until smooth. 2) Divide mixture among12 medium sized or 24 mini sized muffin cups and cover with aluminum foil. 3) Using a sharp knife, make small slits in the foil in the middle of each filled muffin cup and slide in popsicle sticks. 4) Place in freezer and freeze until solid. 5) Unmold popsicles and place in a zip-top bag for storage in the freezer. 6) Enjoy!
