Cách làm chân gà hấp sả ớt

Điểm cộng của món chân gà hấp sả đó là vị thơm nức không thể lẫn đi đâu được hương củ sả, kết hợp gừng quyện với vị cay nồng của ớt và đậm đà của nước chấm phụ gia đã làm xiêu lòng người thưởng thức.
Nguyên liệu cần
Chân gà: 6-8 cái
Sả: 4-5 nhánh
Gừng: 1 củ
Muối trắng
Ớt tươi: 2-3 quả
Chanh: 1 quả
Lá chanh
Rượu trắng
Gia vị: Bột canh, mì chính, hạt tiêu.
Các bước thực hiện
Bước 1: Sơ chế nguyên liệu
+ Cũng tương tự như những cách hấp bên trên: chân gà sau khi mua về cắt hết phần móng, xóc muối hạt rồi rửa sạch bằng nước lọc. Sau đó, cho chân gà vào thau có hòa sẵn chút muối, rượu trắng và vài lát gừng.
+ Ngâm trong khoảng 2-3 phút thì vớt chân gà ra, rửa lại với nước lạnh, cho vào rổ để ráo nước.
- Phần nguyên liệu khác
+ Củ sả làm sạch rồi chẻ dọc xé thành sợi.
+ Lá chanh rửa sạch, xắt sợi chỉ.
+ Gừng nạo vỏ và ớt tươi rửa sạch, băm nhỏ và 1 phần xắt lát.
+ Ớt tươi các bạn rạch đôi, loại bỏ hạt.
Bước 2: Tiến hành hấp

- Chuẩn bị nồi và đồ hấp. Đổ nước khoảng hơn hai đốt ngon tay, thả một vài nhánh sả, một bài củ gừng đập dập.
- Xửng hấp rửa sạch, rải lớp củ sả xuống dưới đáy xửng, sau đó xếp chân gà lên trên, cho 1 vài lát ớt (nếu thích ăn cay).
- Đặt xửng vào nồi, đậy kín vung, để lửa vừa. Hấp chân gà chín tới trong vòng 5-10 nước sôi phút.
- Chân gà sau khi chín thì vớt ra cho ngay vào tô nước đá để chân gà được trắng và giòn hơn.
Yêu cầu món ăn
Sau khi chân gà nguội, vớt ra xếp vào đĩa, trang trí vài nhánh sả đã hấp chín, 1 vài lát ớt tươi, lá chanh xắt nhỏ để món ăn thêm phần hấp dẫn.
Nước chấm chân gà hấp sả ớt vẫn sử dụng Muối ớt tiêu chanh cùng sợi lá chanh tươi thái chỉ là chuẩn bài nhất hoặc nước tương chua ngọt.
