I'm really enjoying these recipes from the 'SpiceKitRecipes'. I was a little confused when I saw a wrap in stead of a sandwich, but apparently Sarah Palin "developed" this recipe. For those of you who had your sights set on a sandwich, this recipe can be easily made into a sandwich. Prep time: 25 mins Cook time: 10 mins Serves: 4 INGREDIENTS: -4 slices bacon, cooked, chopped -¼ cup mayonnaise -½ tsp.dill (Gourmet Garden found in the produce section) -1 lb. crab meat (king, snow, dungeness), shelled, thawed -4 oz. brie cheese, brine removed, diced -1 plum/roma tomato, seeded, diced -1-2 cups arugula -4 (8 inch) whole wheat flour tortillas DIRECTIONS: 1. Cook bacon on medium heat in a large skillet. 2. Meanwhile mix together the dill and mayo in a bowl and set aside 3. Place crab meat and brie together in a non stick pan and heat until brie melts. Use a spatula to combine and flip frequently. Be careful as the crab will stick. 4.Wrap the tortillas in 2 damp paper towels and microwave 20 seconds. 5.Lay out each tortilla and spoon ¼ of the crab and brie mixture down the center of the tortilla, stopping after ¾ of the way down (leaving room to fold the tortilla up). 6.Spread a ¼ of the mayo on the crab. 7.Top with ¼ of the chopped bacon, tomatoes, and arugula. 8.Fold up the end and fold over each side. Secure with a toothpick.
