[50 States, 50 Sandwiches] COLORADO: Denver Omelet Sandwich
Have you heard of a Western Omelet, Southwestern Omelet or Denver Omelet? Just FYI, they are all the same omelet! A delicious mixture of diced bell peppers, ham and onions. *If you want to save on calories I would skip step 8. Only use one slice of cheese for each sandwich. Prep time: 15 mins Cook time: 15 mins Serves: 4 INGREDIENTS: butter 6 eggs 2 Tbsps. water or milk 1½ Tbsps. butter 1 cup (about ⅓ lb.) cured ham, diced ½ cup bell pepper, diced ¾ cup red onion, diced ¾ cup mushrooms, diced 8 slices of pepper jack cheese 8 slices of bread of choice DIRECTIONS: 1. Preheat oven to 425*F and place rack in the middle. 2. While the oven heats, whip eggs and water together in a bowl. 3. Dice ham and veggies. 4. Butter bread on both sides and arrange on a baking sheet. 5.When the oven's ready, put the bread in and toast each side (about 10 minutes for both sides) 6. Meanwhile, heat butter on medium heat in a non-stick skillet. Add ham and bell peppers and saute about 2 minutes. Add onions and mushrooms and saute about 5 minutes. 7.Pour in beaten eggs and move them around with a spatula or wooden spoon so they do not stick to the pan. 8. After 2 to 3 minutes add first 4 slices of cheese and reduce heat to medium/low. Push the eggs to the center of the pan and wait for them to finish cooking so there is no more liquid. At this point avoid moving them around too much as we want to keep them formed together so they aren't too crumbly. 9.Turn on broiler. Remove 4 slices of the toasty bread from the baking sheet and set aside leaving 4 slices on the sheet. 10. Spoon ¼ of the eggs on each of the 4 slices of bread and top with a slice of cheese.
