Caramel Stuffed Chocolate Chip Cookies
These look simply incredible. Two of my favorite things, chocolate chip cookies and caramel, combined into one heavenly cookie creation. I was looking for more caramel recipes (because that's what I do in my spare time, duh) when I found this recipe from Table for Two. I mean, can you even imagine anything more perfect?!? Look at that gooey, warm caramel. Those molten chocolate chunks. That perfectly chewy cookie. Imagine how good these are fresh out of the oven. Caramel Stuffed Chocolate Chip Cookies Prep Time: 10 min. Cook Time: 13 min. Difficulty: Easy Recipe adapted from Table for Two Ingredients 3 sticks (1½ cup) unsalted butter, softened 1½ cup dark brown sugar, packed ½ cup granulated sugar 2 eggs 4 tsp. vanilla extract 2 cups all-purpose flour 2 cups bread flour (you may use all-purpose flour instead if you don't have it on hand) 4 tsp. cornstarch 2 tsp. baking soda 1 tsp. salt 1½ cups chocolate chunks ½ cup dark chocolate, finely chopped 18 caramel candies, cut in half to give you 36 Directions 1. Preheat oven to 350°F. Line baking sheets with parchment paper. In a large bowl, whisk together the flours, cornstarch, baking soda, and salt. In another mixing bowl, cream together butter and sugar until fluffy (about 2 mins). Add eggs and vanilla. Beat 2 more mins. 2. Gradually add flour mixture, beating until fully incorporated. Fold in chocolate chips with a spatula. To form the cookies, take a spoonful of dough, and use your thumb to make a small hole and press the caramel into the center. Re-roll the ball to cover the caramel candy. 3. Bake for 11-13 minutes. They may look quite soft at this point, but remember they will continue to cook after you remove them from the oven. Allow them to cool completely on baking sheet, or else they'll break and caramel will ooze everywhere. Enjoy, my fellow cookie monsters!! Bún Bò Huế - A taste from my parents hometown :) (Vietnamese food)
Spicy, fiery red, and murky, the appearance of bún bò Huế is almost the antithesis of it’s better known Vietnamese soup counterpart, phở bò, which is valued for it’s clarity and pure clean flavors. Although both have beef as it’s main ingredient, it would be a gross injustice to call a spicy version of pho. It’s an entirely different animal altogether with flavors stewed from the marrows of both beef and pork bones along with stalks of bruised lemongrass. The clear broth is then infused with a spicy and wonderous medley of red annato oil, crushed chile peppers, more lemongrass, along with a generous dollop of pungent minced fish paste. If you’re not already salivating by now, you should be. Ladled over thick rice noodles, common toppings include sliced beef shank, ham hock, cooked pork blood, pork patties called chả Huế, and finally plenty of fresh herbs. Hungry yet? If you’re from Huế (The old capital of Vietnam) you’ll just call it bún bò, but anywhere else in the world, you’ll call it bún bò Huế. We just call it pure goodness. You can make this goodness in your own home and it’s not that hard to do. The two main steps are making the broth and seasoning spice. Although the entire process might take about 4-6 hours (sometimes we simmer the broth overnight), the amount of time active cooking is minimal as you’ll see in the video. 베트남에서 바가지 당하지 않는 방법
베트남 여행의 경험이 있는 사람이라면, 주변 사람들로 부터 "거기 위험하지 않아?" 라는 걱정스러운 말을 들은 기억이 있을 것이다. 주변에 바가지 씌인 사람도 많고, 일련의 일들로 인해 베트남 여행을 꺼리는 사람들이 있어 준비했다. 베트남에서 사기 당하지 않는 방법. 첫째는 가격을 물어보는 것에 대해 당당해져라 베트남 식당에서 이거 하나쯤은 서비스겠지 라고 생각하는 것도 전부 계산서에 나온다. 식당에서 손닦는 물티슈 한 장, 테이블 위에 있는 탕콩 등 1회용으로 준비된 경우에는 추가 금액이 부가된다. 꼭 필요하다면 사용 할 수 있지만 가급적 미리 준비하자. 베트남 마트에서 파는 물티슈 가격이 비싸지 않으니 하나 사놓는 것도 좋은 방법이 될 수 있다. 본론으로 돌아가서, 만약 확실하지 않은 경우에는 꼭 "How much?"를 물어보자. 베트남어로는 "Bao nhiêu tiền?" (바오 니여우 띠엔)이니 꼭 물어보자. 이 정도는 괜찮겠지 하다가는 배보다 배꼽이 더 큰 경우가 발생할 수 있다. 서비스일 거라고 예단하지 말고 꼭 "How much?"로 최소한의 억울함은 피하자. 둘째는 스마트폰을 활용하자 여행의 필수 품목 중 하나인 스마트폰은 활용 용도의 따라서 그 가치가 천차만별이 될 수 도 있다. 내가 추천할 앱은 "그랩(GRAB) 이다. 알고 있는 분들도 대부분이지만, 여기서 한 번더 이야기 해드리는 이유는 최근 들어 서비스가 다양해졌기 떄문이다. 먼저, 그랩에 대해 간다히 소기하자면, 0000년 서비스를 시작해 어느덧 우버까지 인수한 명실사부 베트남 대표 택시 기업이다. 일반 택시와 오토바이 택시는 물론이고 최근에는 음식 배달 서비스 까지 합리적인 가격으로 베트남 사람들은 물론이고 여행자들에게도 다가가고 있다. 금액이 정해져 있기 때문에 바가지의 위험성이 적고, 차의 종류도 다양해 인원 수에 따라 선택할수 있다. 개인 여행자라면 오토바이 택시도 좋은 선택지이다. 따로 팁은 안 줘도 된다. 이처럼 그랩은 가격도 저렴하고, 오토바이 천국에서 오토바이도 타보고, 헬맷까지 준비해주니 여러모로 꼭 이용해보길 바란다. 음식 배달서비스도 나름 만족한다는 평이 있으니, 필요하신 분들은 꼭 이용해보시기를 추천드린다. 스카이스캐너를 통해 비행기를 예약하고, 부킹닷컴이나 아고다로 숙소를 예약한 후 이동은 그랩으로 맛집은 지난번에 올린 방법으로 찾으면, 나름 괜찮은 여행이 될 것이다. 세번째는 자신의 숙소를 이용하자 이 방법은 투어나, 교통수단 예약시 호텔이나 게스트하우스를 이용하는 방법이다. 프론트에서 자신의 다음 여행지를 이야기하고, 투어나 가는 교통편 예약을 문의한다면 의외로 많은 정보를 알 수 있다. 물론 케바케가 있을 수는 있지만, 대체로 평균이나 평균 이하의 가격을 제시하는 곳들도 있어 위험부담을 줄일수 있고, 예약의 문제가 있을 시 숙소에서 해결해 줄수 있어, 2차 피해방지를 예방할수 있다. 버스편 예약시 해당 숙소에서 픽업하는 서비스도 누릴수 있다. 이외에도, 숙소를 이용하는 방법은 무궁무진하다. 숙소 도착 후 프론트 전화번호나 명함을 챙기면, 여행 중 길을 잃었을 때, 문제가 있을 때, 통역을 해주기도 하며, 안전하게 숙소로 돌아올수 있도록 택시를 보내주기도 한다. 체크아웃후, 짐을 맡길수도 있고 공항 픽업 서비스를 이용할수도 있다. 꼭 확인 후 이용하자. 위 방법들은 베트남 여행은 물론 대부분의 동남아 여행을 할 때 균등하게 쓰일 수 있다. 겁먹지 말고 미리미리 준비해 피해를 최소화하고 여행에 집중할수 있으면 좋을 것 같다. 짤막한 소개 안녕하세요.  "여행은 현지인의 삶을 엿보는 것이다"라는 나름에 철학을 갖고 24년 인생에서 10년째 해외 배낭여행을 다니고 있는 이산입니다. 여행 유튜버가 대세인 이 시점에서 아직도 매 여행 후 글을 남기는 이유는 어릴적 읽었던 한비야 책의 영향 일수도 있고, 동영상 보다는 텍스트를 더 사랑하는 제 마음 때문일수도 있지만, 어릴적 보았던 영화 "라따뚜이"의 명대사 "Anyone can cook"을 나름대로 바꿔 "Anyone can travel"로 살기위해 오늘도 스카이스캐너 앱을 키고있는 이산 입니다.  궁금하신점 있으시면, 댓글로 남겨주세요 최대한 빨리 맞은 정보로 답변해드리겠습니다. 글 읽어주셔서 감사합니다.

[Week 1] Monday & Friday - Rest Day Recipes (Chocolate Peanut Butter Banana Smoothie)
You've got to love a training plan that starts off with a rest day! Since Tuesday will be my first long distance run, I want to make great post-run meals ahead of time since I'll probably be too tired once I get home. I'll be making a Chocolate Peanut Butter Banana Smoothie since it has complex carbs AND protein. Plus its chocolate peanut butter...hello! Here’s the protein breakdown of my new favorite smoothie: 6 oz greek yogurt → 18 grams 3/4 cup skim milk → 6 grams 1 Tablespoon natural peanut butter → 4 grams The yogurt adds a ton of protein to the shake and should be pretty easy on your stomach, which can be sensitive after a run. Here's the recipe, enjoy! Ingredients: 1 large banana, peeled, sliced, and frozen 3 Tablespoons unsweetened cocoa powder 6 oz Chobani 0% Greek Yogurt (or 2%, flavored or unflavored) 3/4 cup skim milk (or your favorite kind of nondairy or dairy milk) 1 Tablespoon honey, maple syrup, or agave 1 Tablespoon peanut butter (any kind you like) Directions: Put all of the ingredients into the blender, in the order listed, and blend on high until thick and smooth. I would start with only 2 Tablespoons of cocoa powder, blend, and then add 1 more for a stronger chocolate taste. You may need to stop and stir/scrape down the sides of the blender a few times. Drizzle glass with 1 teaspoon of chocolate syrup (optional) and enjoy! If you prefer a less sweet smoothie, you may leave out the honey. Add more peanut butter for a stronger peanut butter taste. Add more milk to make the smoothie thinner, if desired. Add 1 cup of your favorite greens for added nutrition.

I guess these people never got the memo about lasagna being a dinner food – and oh man, am I glad they didn't. These innovative kitchen wizards have turned a saucy Italian cheesefest into a gourmet dessert. This is a food trend that I have NO doubt we'll be seeing soon on upscale dessert menus around the world. S'mores Lasagna may be an improvement on the already impossibly wonderful campfire dessert, because it's got two types of graham cracker (original AND chocolate), marshmallow fluff, whipped cream, and – for the mess-haters among us – you can eat it with a fork. Brownie Brittle Strawberry Lasagna Before we get too carried away in our decadence, Julianne (yep, we're on a first name basis now) has whipped up a lighter version of dessert lasagna featuring a cheesecake filling, dark chocolate pudding, and plenty of strawberries. See? It's got fruit! It's obviously healthy. Yet again, recipe by my idol, Julianne Bayer of Beyond Frosting Nutella Cheesecake Lasagna Okay, so maybe the photography skills are a little lacking on this one, but the concept is so flawless that I had to include it. Nutella and cheesecake, married into one perfect lasagna that is then dusted with brownie mix and chocolate chips. I can't really explain how much I'm salivating right now. Interesting ingredients in this one include coconut palm sugar, almond butter, apple cider vinegar, and shredded zucchini. I won't pretend to understand how it all works, but I will trust the author when she says it's delicious. Maybe. Recipe by Vanessa Barejas of Clean Eating with a Dirty Mind (which is an awesome name for a blog) Fabulous Fruit Lasagna Whoa, a dessert lasagna that actually uses noodles! I bet you were wondering when one of these was gonna show up. This lasagna is a delightful conglomeration of fresh berries, mascarpone and ricotta cheeses, brown sugar, nutmeg, cloves, and a pinch of chili powder. Not what I was expecting! Browne, posted on Just a Pinch Chocolate Toast Crunch Lasagna Did you know that Cinnamon Toast Crunch has a chocolaty cousin? Chocolate Toast Crunch adds a special, well, crunchiness to this dessert lasagna. Its creamy filling has a hint of almond flavor. Mmm. Recipe by Cheeky Kitchen, posted on Tablespoon Frozen Snickers Peanut Butter Lasagna It's been pretty hot out, so why not stick your dessert lasagna in the freezer? Dry roasted peanuts, caramel sauce, and little pieces of Snickers? This is exactly what I want to be eating right now. Chocolate Chip (Perfectly Safe!) Cookie Dough Truffles
About two weeks ago, @vegantraveler posted the most hilarious card in her Vegan Laughs that really got me thinking. It had a picture of a vegan baker licking cake batter off a mixing whisk and bragging about how vegans get to eat all the batter they want! (Check it out over here: http://www.vingle.net/posts/586948-Why-I-love-Vegan-Baking) And it's true! While admittedly, I haven't been vegan or vegetarian in years (gasp), I do still eat vegan and vegetarian foods regularly and appreciate the added safety in plant-based recipes. With no egg, no meat, and no dairy, there's less risk of foodborne illnesses and a much longer shelf life. (It's also perfect in a potluck situation when you know it's going to be left out for a long time!) With that being said, you can share and enjoy these cookie dough truffles (made with vegan cookie dough) without all of the concern that usually comes along with eating raw dough. One of my sister's favorite activities to do each holiday season is make a huge batch of vegan truffles for friends, and this is certainly our most favorite! --------------------------------------------------------------- Chocolate Chip Cookie Dough Truffles 2 1/2 cups all purpose flour 1 teaspoon salt 1 cup (2 sticks) vegan butter or margarine, room temperature 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 teaspoon vanilla extract 1/3 cup soy or almond milk 1 cup mini semi-sweet chocolate chips 14 ounces of meltable chocolate (Ghiradelli and Godiva both make vegan melting chocolate, but other natural food brands do too.) 1. Beat butter and sugars and in large bowl with electric mixer on medium speed until light and fluffy. Add cream and vanilla. Stir in flour and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips. 2. Cover and chill dough for 1 hour. 3. When dough is firm enough to handle (it may help to lightly flour your hands), form dough into 1" balls and arrange on a baking sheet lined with waxed paper. Place sheets in freezer and let chill for 30 minutes. 4. Melt chocolate candy coating in a double boiler or in microwave according to package directions. Using forks or a dipping tool, dip cookie balls into candy coating to cover. Tap fork on side of pan to remove any excess coating, and return to waxed paper-lined baking sheets. Chill until set. Store, chilled, in an airtight container for up to 1 week.
