Ingredients: 80g (130g) strawberry puree 70g (120g) egg yolk 15g (30g) sugar (A) 45ml (80ml) veg oil 10ml (20ml) lemon juice 90g (150g) cake flour, sifted 150g (250g) egg whites 60g (100g) sugar (B) Directions : 1. in a bowl place egg yolks, sugar (A), strawberry puree & mix well. add in flour then whisk until combined. 2. whisk egg whites, sugar (B) & lemon juice until stiff peaks, then fold into the yolk mixture in 3 additions. 3. pour mixture into an ungreased chiffon tin and knock it against the countertop to release some air bubbles, then bake in a preheated oven of 180C for 35-40 mins until cooked or cake tester inserted into the center of the cake comes out clean. remove cake from oven and invert immediately until cooled.
