Samgyetang is Korea's cure-all chicken soup. This revitalising food is frequently sought out by locals for its medicinal benefits - particularly its ability to replenish energy taken by the summer heat. Some may think it strange to eat a hot soup to combat summer fatigue but it follows the line of thinking that its best to 'fight fire with fire'. That said, while it is particularly sought out during the muggy, insufferable summer heat, its also one of those fantastic dishes that will warm you from the inside out during the bone-chilling Korean winter months. Samgyetang is made from a young chicken that has been stuffed with undried ginseng, garlic, jujubes, peeled chestnuts and glutinous rice. The chicken is cooked in its own broth until the soup turns white and may be served with medicinal additives including wolfberries and gingko nuts.
