Ingredients 2 cups cooked chicken, shredded 1/4 cup finely chopped celery 1/4 cup chopped pecans 1 cup sweet dark cherries, pitted and chopped (plus 6 to 8 whole for juicing) 2 Tablespoons olive oil 1 Tablespoon red wine vinegar 2 Tablespoons cherry juice 2 teaspoons honey 1/2 teaspoon fresh thyme leaves Salt and pepper to taste Instructions - Mix chicken, celery, pecans, cherries and thyme together. Set aside. - Whisk together oil, vinegar, juice, honey, salt and pepper. - Pour over chicken mixture and stir to coat. - Serve as a sandwich or over your favorite greens.
Looks good but whether peacan or walnuts would taste better to lightly toast on a skillet first~
I'm with @PaulLim! Toasted nuts on this salad would take it to a whole new level!

I like the sound of this as a sandwich. Maybe even heating it up a bit first. Yum!
that looks really yummy -is there any chance that the pecans could be substituted with alternative nuts?
