2 cups cooked chicken, shredded
1/4 cup finely chopped celery
1/4 cup chopped pecans
1 cup sweet dark cherries, pitted and chopped (plus 6 to 8 whole for juicing)
2 Tablespoons olive oil
1 Tablespoon red wine vinegar
2 Tablespoons cherry juice
2 teaspoons honey
1/2 teaspoon fresh thyme leaves
Salt and pepper to taste
- Mix chicken, celery, pecans, cherries and thyme together. Set aside.
- Whisk together oil, vinegar, juice, honey, salt and pepper.
- Pour over chicken mixture and stir to coat.
- Serve as a sandwich or over your favorite greens.
