Perfect Pan-Seared Steak
The basics to any perfect steak dish is a good quality, high-grade cut of beef. Ingredients: 1 bone-in or boneless rib eye steak or sirloin steak at least 1 ½ pounds, cut to at least 1 ½ inches thick Pinch of salt Freshly ground black pepper 2 teaspoons extra-virgin olive oil 3 tablespoons butter 2 peeled garlic cloves, left whole Few sprigs fresh parsley, including stems Optional: Wine and stock (chicken, beef, veal,etc.) and butter for deglazing the pan and making a delicious pan sauce Directions: 1. Salt and pepper one side of the steak. 2. Heat your seasoned cast iron skillet to smoking hot. Add oil and swirl around to coat. Add steak seasoned-side down (place it in pan away from you so you don’t get splattered), and then salt and pepper the other side of the steak. At this point do not touch it for two minutes. Using tongs (never pierce the meat with a fork), flip the steak and add butter, garlic and parsley to the pan next to the steak. Allow the steak to cook for 2 more minutes. 3. Right after you flip the steak for the first time, with a spoon or small ladle, keep basting the melted butter over the steak. Baste continually for the full two minutes (tilt pan a little if you have to, to get the butter onto the spoon). 4. After two minutes on each side, keep flipping and basting the steak each time leaving the steak for 30 seconds before turning. Test the steak with the poke test (see note below) and remove at medium rare at about the five to six minute mark of total cooking time. Cook a minute or two longer for medium to well. A thicker steak (such as a sirloin) may take longer. 5. Turn off the heat and baste one more time. Leave the steak in the pan loosely covered with foil for 10 minutes and allow to rest before cutting. Baste one more time, and remove to a cutting board. Either cut the steak in half for each serving or for a nicer presentation, slice on the bias and serve slices. 6. Discard the pan drippings or if desired, deglaze the pan with a little wine, then and stock and simmer for a few minutes to reduce the drippings. Add a tablespoon or two of butter to thicken for a nice pan sauce .

Chicken Alfredo Baked Ziti
Delicious chicken and ziti tossed with a lighter alfredo sauce and baked up to cheesy perfection. INGREDIENTS: CHICKEN BAKED ZITI INGREDIENTS: 12 ounces ziti (or any pasta shape) 2 cups shredded, cooked chicken (about 2 small chicken breasts) 1 batch alfredo sauce (see below) 1 1/2 cups shredded mozzarella cheese (I used 2% low fat) (optional toppings: additional shredded Parmesan cheese, chopped fresh parsley) ALFREDO SAUCE INGREDIENTS: 1 Tbsp. olive oil 4 cloves garlic, minced 3 Tbsp. flour 1 cup chicken broth 1 cup low-fat milk (I used 1%) 3/4 cup freshly-grated Parmesan cheese 1/2 tsp. salt 1/4 tsp. black pepper DIRECTIONS: TO MAKE THE CHICKEN BAKED ZITI: Preheat oven to 375 degrees F.Cook the pasta al dente in a large stockpot of well-salted boiling according to package instructions. Drain. Return pasta to the stockpot and add chicken and alfredo sauce. Gently toss to combine until the pasta is evenly coated. Pour half of the pasta into a greased 11x7-inch or 9x13-inch baking dish. Sprinkle evenly with 1 cup of cheese. Layer the remaining half of the pasta evenly on top. Sprinkle evenly with the remaining 1/2 cup of cheese. Bake for 20-25 minutes until the cheese is melted and just barely starts to turn golden. Remove and serve immediately, sprinkled with additional toppings if desired. TO MAKE THE ALFREDO SAUCE: Heat olive oil in a large saute pan over medium-high heat. Add garlic and saute one minute, stirring occasionally, until fragrant. Sprinkle with flour, and stir to combine. Saute for an additional minute to cook the flour, stirring occasionally. Slowly add chicken broth, whisking to combine until smooth. Whisk in milk, and bring the mixture to a simmer. Let cook for an additional minute until thickened, then stir in Parmesan cheese, salt and pepper until the cheese melted. Remove from heat and set aside.

3 Super Salads to Power You Through the Week
Are you dreading it's only Tuesday? I'm feeling the same. I barely recovered from a bad cold and my body is lacking energy. I know that because my digestive system has been a weird lately. Which is why I'm sharing three super salads to help you (and me) power through the week! Spicy Shrimp & Avocado Salad Staring at the photo alone already brighten my appetite. This green salad is filled with vitamin and good fats. Grilled some shrimp on a pan, chop up some spinach, baby kale and cucumbers, toss in a few cubes of avocado and you're done! Lime juice is sufficient for me but if you like more flavor. The original recipe uses a miso dressing. To make the dressing simple combine 1-inch peel ginger, 3 tablespoons lime juice, 1 1/2 tablespoon white miso and 1/2 teaspoon minced garlic and 1/4 teaspoon salt. Adapted from: Pinch of Yum Fresh Spring Salad with Poached Cod Here's a nice salad to kick start your spring and to bring balance to your tummy. I know eating fish is healthy for me but I hardly eat them. I could only do two bites of raw salmon and I'm done. To get a little omega-3 in my diet poached cod doesn't sound like a horrible idea (I'm horrible with the skillet anyways). Just make sure you don't overcook it. 5-6 minutes in boiling water is sufficient! Take it out and plate it on a salad with parsley, beets, radishes, spring onions, pea shoots and parsley. For the dressing - 2 tbsp rapeseed oil or olive oil, 1/2 tbsp white balsamic vinegara, squeeze of lemon, sea salt to taste. Adapted from: Dagmar's Kitchen Edamame and Radish Salad I promise this is the simplest super salad ever. Boil a cup of edamame and toss it diced onions (or shallots) and radishes. All you need for the dressing is - 2 tablespoons vinegar, a pinch of salt and a pinch of sugar (no more than 1/8 teaspoon). Just before tossing everything together add 2 tablespoons of olive oil. Aroma: With orange-oriented citrus scent, colorful tropical fruit scents such as fashion fruits, and guavas, there is also a slight herb scent. Flavor: When you drink it, you can feel the scent of orange-based citrus, tropical fruits like mango and pineapple, and the smell of grass from the hops. The bitter taste of beer is low, and various fruit scents give a deep and powerful aftertaste. Mouthfeel: It has a full body and a soft texture. With low carbonation, alcohol booze feels as low as 11% ABV, cause of its rich and diverse flavors and flavors.
