Almond Pear Muffins (Gluten Free)
Ingredients: 350 g rice flour 2 tsp baking powder 1/2 tsp salt 1/2 tsp cinnamon 150 g light brown sugar 100 g cream cheese 50 g melted butter, cooled slightly 2 large eggs 400 g pear cut into small cubes Honey to brush Flaked almonds to decorate Preparation: Preheat the oven to 200º Prepare a 12 muffin tin with paper cases. In a bowl put the flour, salt, baking powder and cinnamon. In another bowl mix the sugar, cream cheese, eggs and melted butter just to combine. Fold together the wet and dry ingredients until just bended, don´t over mix. Stir in the cubes of pear. Spoon into the 12 bun muffin tin and bake for 20 minutes. Let them rest for 5 minutes and brush them with honey, while they are still hot. Sprinkle with flaked almonds and eat still warm.

I don't think I've ever had a pear muffin before, but baked pears are one of my favorite desserts. This sounds like it would have a really fresh taste.

I havent seen a pear muffin either. Such a simple recipe, but is sounds so fancy!

Does the rice flour make it a lighter dough?

my roommates and I baked something really similar quite often; cool!! we never added as much pear though so ill try this one too
