Chai cupcakes can come in a lot of variations, but these are a great basic recipe! Recipe adapted from 500 cupcakes. Cupcake Ingredients: 2 cups cake flour 1 tsp. baking powder 1/2 tsp. salt 1 tbsp. chai tea powder 1/4 cup (1/2 stick) sweet butter 3/4 cup packed light brown sugar 2 large egg whites 2/3 cup buttermilk Frosting ingredients: 1 cup cream cheese, softened 1 1/2 cup confectioners' sugar, sifted 1 tbsp. lemon juice 1 tsp. vanilla extract 1. Preheat oven to 350 degrees F. 2. Place 12 baking cups in a muffin pan. 3. In a medium bowl, mix the flour, baking powder, salt, and chai powder. 4. In another bowl, beat butter and sugar until smooth. 5. Add egg whites slowly, beating well. 6. Slowly add the flour mixture and finally the buttermilk. Mix until combined. 7. Spoon into cups and bake for 20 minutes. 8. Remove and cool for 5 minutes. Frosting instructions: 1. Mix cream cheese and confectioners' sugar in medium bowl. Beat until soft and light. 2. Add the lemon and vanilla, and beat until smooth. 3. Spoon the frosting over the cupcakes. *Note! you can also add a touch of cinnamon to the icing for a fun twist. *Note! Pictured cupcakes are a buttercream cinnamon frosting, so if you don't like cream cheese, try it instead!
