It's peach season, and I keep buying them and forgetting to eat them. Now I can use a bunch of them at once! Ingredients: Dough: 3 c. all purpose flour 1 c. sugar 1 tsp. baking powder 1/4 tsp. salt 1 c. unsalted butter, cold 1 egg, slightly beaten Filling: 5 c. diced or sliced peaches (about 5 medium peaches) 2 tbsp. lemon juice 1/2 c. all purpose flour 1 c. sugar 1/4 tsp. salt 1/2 tsp. ground cinnamon 1/4 tsp. ground nutmeg Directions: 1. Heat oven to 375°F. Grease a 13x9-inch pan; set aside. 2. For dough, in a medium bowl, whisk together flour, sugar, baking powder and salt. Using a pastry blender, cut in butter. 3. Add egg and mix in with pastry blender (mixture will be crumbly). 4. Pat half of the dough into the prepared pan. Place remaining dough into refrigerator until ready to use. 5. Meanwhile, for filling, place peaches in a medium bowl and sprinkle with lemon juice; mix gently. 6. In a separate bowl, whisk together flour, sugar, salt, cinnamon and nutmeg. Pour over peaches and mix gently. 7. Spread the peach mixture evenly over the crust. Crumble the remaining dough over the peach layer. 8. Bake for 45 minutes or until the top is slightly brown.
