Adding some herbs to kick your cobbler up a notch! serves 10 you will need: 2 peaches, pit removed and sliced 1 cup black berries 1 tsp fresh thyme, wood stem removed 1/2 tsp salt 1 tsp baking powder 1 cup coconut flour or all purpose flour 1/4 cup coconut oil, softened 1/2 cup + 1/4 cup coconut sugar 1/2 cup almond milk 1 cup boiling water assembly: pre heat oven to 350* Whisk the flour, baking powder thyme, and salt together in a mixing bowl. Cream 1/2 cup of coconut sugar with the softened coconut oil until light and fluffy. Mix in the flour mixture alternately with the almond milk until no large lumps remain. Pour into a 8x8 baking dish. Arrange the berries & peaches over the batter, and sprinkle with the remaining 1/4 cup of sugar. Pour the boiling water over top. Bake in the preheated oven until the batter has firmed and the berries & peaches are soft, about 40-50 minutes.
