Banana & Honey Cupcakes with Honey Cinnamon Frosting are easy to make, (fairly) healthy, and totally delicious! Walnuts, or a similar variation like pecans or hazelnuts, add the perfect crunch! Ingredients: 1 3/4 cups (about 4) mashed bananas 3/4 cup packed light brown sugar 1/4 cup honey 4 tbsp. margarine, melted 2 cups cake flour 1 tsp. baking powder 1/2 tsp. salt 3/4 cup (5 oz.) roughly chopped walnuts Instructions: 1. Preheat the oven to 350 F. Fill muffin pan with baking cups. 2. In a large bowl, combine the bananas, sugar, honey, and margarine. Beat with an electric mixer until well blended. 3. Slowly add the flour, baking powder, and salt, and mix well. Fold in the chopped walnuts. 4. Spoon the batter into the cups. 5. Bake for 20 minutes. 6. Remove pans from the oven and cool for 5 minutes. Remove the cupcakes and cool on a rack. Place each in a foil cup to display. You can store these in an airtight container for up to 2 days, or freeze for up to 3 months. Honey Cinnamon Frosting: 1 1/4 cup confectioners' sugar 1/2 cup (1 stick) unsalted butter, room temperature 1 tablespoon honey 1/8 teaspoon ground cinnamon 1. Blend all ingredients together for 4-5 minutes! Try these fun variations: *Add 3/4 hazelnuts instead of walnuts! *Add 1/4 cup maple syrup instead of honey. * Add pecans instead of walnuts, and 1/4 c. corn syrup instead of honey. * Add 3/4 dried blueberries instead of walnuts.
