This looks so easy! If you don't have all the salad ingredients, LaaLoosh recommends the Cruciferous Crunch salad mix from Trader Joes. I haven't tried it, but I will now! I love tahini!
1 pound cooked chicken breast, chopped
2 cups kale, finely chopped
1 cups red cabbage, shredded
2 cups broccoli slaw
1 1/2 cups cherry tomatoes
1 medium red onion, thinly sliced
1/2 cup prepared tahini sauce (I used the one from Trader Joe’s)
Juice from 1 small lemon
In a large bowl, combine all vegetables and toss well.
Top salad with chicken breast.
Place tahini sauce and lemon juice in a small bowl, mix well, and add water teaspoon by teaspoon to thin out to desired consistency. Pour over salad and serve.
