One of the most important parts of pretzel making is in the final steps: it gives them that unique pretzel flavor! Food-grade lye dissolved in water gives the best flavor, but can be incredibly hard to come by for home cooks. Most people use baking soda instead, but the percentage of alkaline is much lower. It is possible to bake baking soda in such a way to make it more like lye, but it still isn't as amazing! I prefer the lye method, but I'll teach you both here so you can choose what is best for you!
