Blueberry Pudding Cake
Serves about 6 2 cups blueberries 1 teaspoon cinnamon 1 teaspoon lemon juice 1 cup flour 3/4 cup sugar 1 teaspoon baking powder 1/2 cup milk 3 tablespoons butter, melted 3/4 cup sugar 1 tablespoon cornstarch 1 cup boiling water whipped cream or ice cream Preheat oven to 350. Toss the first three ingredients together and then place in a buttered 8-inch square pan. In a bowl, combine the flour, 3/4 cup sugar, and baking powder. Stir in milk and butter. Spoon over berries and spread evenly. To make the topping, combine 3/4 cup sugar and cornstarch. Sprinkle over batter. Slowly pour boiling water over all. Bake at 350 for 45 minutes. Serve with whipped cream or ice cream.
