Chocolate-Strawberry-Orange Wedding Cake

When I was engaged, Bon Appetit published this recipe for a wedding cake. Feeling inspired, I baked my own three-tier wedding cake. I finished piping it while my hair was in rollers, just 90 minutes before I walked down the aisle. I don't recommend brides baking their own wedding cakes, but if you have a family member with good baking and decorating skills, consider this one. It is still revered as the best cake anyone had tasted! Ingredients Cake Layers 4 cups orange juice, room temperature 4 ounces unsweetened chocolate, finely chopped 6 cups sifted cake flour 1 1/3 cups unsweetened cocoa powder 4 teaspoons baking soda 2 teaspoon salt 1 teaspoon baking powder 2 cups (4 sticks) unsalted butter, room temperature 6 cups sugar 8 large eggs, room temperature 2 tablespoons (packed) grated orange peel 2 tablespoons vanilla extract 2 cups miniature semisweet chocolate chips (about 12 ounces) 2 6-inch-diameter cardboard cake rounds 2 8-inch-diameter cardboard cake rounds 2 12-inch-diameter cardboard cake rounds Chocolate-Strawberry-Ganache White Chocolate Frosting Filling and Frosting Cake Layers 1 1/4 cups (about) strawberry jam Unsweetened cocoa powder 1 11-inch-diameter revolving cake stand (optional) Assembly 9 12-inch-long, 1/4-inch-diameter wooden dowels 3 oranges Decorative ivy or fresh mint sprigs, rinsed, patted dry 5 1-pint baskets strawberries Preparation For Cake Layers: Position 1 rack in center and 1 rack in bottom third of oven and preheat to 350°F. Butter one 5-inch-diameter cake pan with 2-inch-high sides, one 8-inch-diameter cake pan with 2-inch-high sides and one 12-inch-diameter cake pan with 2-inch-high sides. Dust pans with flour; line bottoms with parchment. Combine 1/3 cup orange juice and 2 ounces unsweetened chocolate in heavy small saucepan. Stir mixture over medium-low heat until chocolate melts. Remove from heat. Gradually mix in 1 2/3 cups orange juice. Sift 3 cups flour, 2/3 cup cocoa, 2 teaspoons baking soda, 1 teaspoon salt and 1/2 teaspoon baking powder into medium bowl. using electric mixer, beat 1 cup (2 sticks) butter and 3 cups sugar in large bowl until blended (mixture will look grainy). Add 4 eggs, 1 at a time, beating to blend after each. Beat in 1 tablespoon orange peel and 1 tablespoon vanilla extract. Add dry ingredients alternately with orange juice mixture in 3 additions each, beating well after each addition. Mix in 1 cup chocolate chips. Transfer 1 cup plus 2 tablespoons batter to prepared 5-inch pan, 3 cups batter to prepared 8-inch pan and remaining batter (about 6 cups) to 12-inch pan. Place 5-inch and 8-inch pans on center rack of oven. Place 12-inch pan on lower rack of oven. Bake cakes until tester inserted into center comes out clean, about 35 minutes. Transfer cakes in pans to racks and cool completely. Mark 4-inch diameter circle on one 6-inch-diameter cardboard cake round. Cut out marked circle. Mark 7-inch-diameter circle on one 8-inch-diameter cardboard cake round. Cut out marked circle. Mark 11-inch-diameter circle on one 12-inch-diameter cardboard cake round. Cut out marked circle. Cut around sides of 5-inch-cake to loosen. Place 4-inch cardboard over pan. Hold cardboard and pan together; turn cake out onto cardboard. Peel off parchment.Wrap cakes on its cardboard in foil. Repeat turning out, peeling off parchment and wrapping cakes in foil, using 7-inch cardboard for 8-inch cake and 11-inch cardboard for 12-inch cake. Using remaining ingredients, make 1 more batch of cake batter and bake 3 more cake layers as described above. Cool cakes in pans. Cover cakes in pans tightly with foil. (Can be prepared ahead. Let stand at room temperature up to 1 day or double-wrap all cake layers and freeze up to 1 week. Bring cake layers to room temperature before using.) For Filling and Frosting Cake Layers: Place first 12-inch cake on its cardboard on work surface. Spread 2 3/4 cups ganache over top of cake and all the way to edge. Spread 2/3 cup jam over ganache, leaving 1/2-inch chocolate border at edge. Drop 1 3/4 cups white chocolate frosting by spoonfuls over jam. Gently spread frosting over jam, leaving 1/2-inch chocolate border at edge. Rub some cocoa powder over second 12-inch cardboard. Cut around sides of second 12-inch cake to loosen. Place cardboard, cocoa side down, over pan. Turn cake out onto cardboard. Peel off parchment. Carefully slide cake off cardboard and onto filling on first 12-inch cake. Refrigerate. Place first 8-inch cake on its cardboard on work surface. Spread 1 cup ganache over top all the way to edge. Spread 1/4 cup jam over, leaving 1/2-inch chocolate border at edge. Drop 1 cup white chocolate frosting by spoonfuls over jam. Gently spread frosting over jam, leaving 1/2-inch chocolate border at edge. Rub some cocoa over second 8-inch cardboard. Cut around sides of second 8-inch cake to loosen. Place cardboard, cocoa side down, over pan. Turn cake out onto cardboard. Peel off parchment. Slide cake off cardboard and onto filling on first 8-inch cake. Refrigerate. Place first 5-inch cake on its cardboard on work surface. Spread 1/2 cup ganache over top of cake and all the way to edge. Spread 2 tablespoons jam over, leaving 1/2-inch chocolate border at edge. Drop 1/3 cup white chocolate frosting by spoonfuls over jam. Gently spread frosting over jam, leaving 1/2-inch chocolate border at edge. Rub cocoa over second 6-inch cardboard. Cut around sides of second 5-inch cake to loosen. Place cardboard, cocoa side down, over pan. Turn cake out onto cardboard. Peel off parchment. Slide cake off cardboard and onto filling on first 5-inch cake. Chill all cakes 1 hour to set filling. Place 12-inch tiered cake on its cardboard on revolving cake stand. Spread 2 2/3 cups frosting over top and sides of cake as a first coat. Refrigerate cake. Place 8-inch tiered cake on its cardboard on cake stand. Spread 1 1/4 cups frosting over top and sides of cake as a first coat. Refrigerate cake. Place 5-inch tiered cake on its cardboard on cake stand. Spread 3/4 cup frosting over top and sides of cake as a first coat. Refrigerate all cakes until first coats of frosting set, about 1 hour. (Cakes can be made to this point up to 1 day ahead; cover and keep refrigerate.) Prepare second batch of frosting, using remaining frosting ingredients and following directions for first batch. Spoon 2 cups frosting into pastry bag fitted with small star tip. Place 12-inch cake on its cardboard on large flat platter. Place platter on cake stand. Using icing spatula, spread 2 1/2 cups frosting over top and sides of cake; smooth top. Using filled pastry bag, pipe decorative border around top edge of cake. Refrigerate cake on platter. Place 8-inch cake on its cardboard on cake stand. Using icing spatula, spread 1 1/2 cups frosting over top and sides of cake; smooth top. Using pastry bag, pipe decorative border around top edge of cake. Refrigerate cake on its cardboard. Place 5-inch cake on its cardboard on cake stand. Using icing spatula, spread 3/4 cup frosting over top and sides of cake; smooth top. Using pastry bag, pipe decorative border around top edge of cake, spooning more frosting into bag if necessary. Refrigerate cake on its cardboard. Keep all cakes refrigerated until frosting sets, about 2 hours. (Can be prepared 2 days ahead. Cover loosely; keep refrigerated.) Assembly Place 12-inch cake on platter on work surface. Press 1 wooden dowel straight down into and completely through center of cake. Mark dowel 1/4 inch above top of frosting. Remove dowel and cut with serrated knife at marked point. Cut 4 more dowels to same length. Press 1 cut dowel back into center of cake. Press remaining 4 cut dowels into cake, positioning 3 1/2 inches inward from cake edges and spacing evenly. Place 8-inch cake on its cardboard on work surface. Press 1 dowel straight down into and completely through center of cake. Mark dowel 1/4 inch above top of frosting. Remove dowel and cut with serrated knife at marked point. Cut 3 more dowels to same length. Press 1 cut dowel back into center of cake. Press remaining 3 cut dowels into cake, positioning 2 1/2 inches inward from edges and spacing evenly. Using large metal spatula as aid, place 8-inch cake on its cardboard atop dowels in 12-inch cake, centering carefully. Gently place 5-inch cake on its cardboard atop dowels in 8-inch cake, centering carefully. Using citrus stripper, cut long strips of orange peel from oranges. Cut strips into long segments. To make orange peel coils, wrap peel segment around handle of wooden spoon; gently slide peel off handle so that peel keeps coiled shape. Garnish cake with orange peel coils, ivy or mint sprigs, and some berries. (Assembled cake can be made up to 8 hours ahead. Let stand at cool room temperature.) Serving Remove top and middle cake tiers. Remove dowels from cakes. Cut top and middle cakes into slices. To cut 12-inch cake: Starting 3 inches inward from edge and inserting knife straight down, cut through from top to bottom to make 6-inch-diameter circle in center of cake. Cut outer portion of cake into slices; cut inner portion into slices and serve with strawberries. When it comes to the campfire roasted, ooey-gooey perfection that is s'mores, I'm a purist. I've never once considered putting anything but two rectangles of good ol' Hershey milk chocolate between marshmallow and graham cracker. But then I found this recipe at Melanie Makes, and I don't care what you say, about blasphemy or anything else – once you've seen this picture, there's no going back. I HAVE to try putting a peanut butter cup on a s'more. It's a physical need. And if I don't do it soon, I might explode. So somebody come over and make these brownies with me tonight, please – it's an emergency. Peanut Butter Cup Stuffed S'mores Brownies Prep Time: 20 min. Cook Time: 45 min. Difficulty: Easy. Makes one 9"x13" pan of brownies. Recipe by Melanie Bauer of Melanie Makes Ingredients For the Graham Cracker Crust: 3 cups graham cracker crumbs ¼ cup sugar ¼ teaspoon salt ¾ cup butter, melted For the Brownies: ¾ cup cocoa ¾ cup butter, melted 2 Tablespoons hot water 1 2/3 cup sugar 2 eggs, beaten 2 teaspoons vanilla 1 1/3 cup flour ½ teaspoon baking powder ¼ teaspoon salt 12 peanut butter cups 1 dark chocolate candy bar 24 jet-puffed marshmallows Directions 1. First, make the Graham Cracker Crust: Preheat oven to 350 degrees. Grease a 9x13 pan and set aside. In a medium bowl, stir together graham cracker crumbs, sugar, salt and butter until combined. Pour into prepared pan and press into an even layer. Bake for 12-14 minutes or until set and beginning to brown. 2. Now, make the Brownie batter: In a large bowl, stir together cocoa, melted butter and hot water. Add sugar, eggs and vanilla and stir until well combined. Stir in flour, baking powder and salt until just combined. 3. Add the PB Cups and Chocolate: Top graham cracker crust with brownie mixture, spreading in an even layer. I was in a baking mood and decided to try to make these! They came out good for my first time 😁😁 I'll post my recipes below if you'd like to try and make them. If you'd like the recipe, message me 😘 My bun recipe: -200g milk (Lukewarm) -5g active dry yeast -30g sugar --240g bread flour -60g all purpose flour -30g butter (room temp) -Egg wash Step 1: put lukewarm milk, sugar and yeast in a bowl. Whisk and set aside for 5min Step 2: in a separate bowl, combine bread flour and all purpose flour. Then add milk mixture. Add a pinch of salt and knead dough Step 3: after dough can take ball form, knead in the room temp butter. Knead until butter is fully incorporated. After incorporated, put in a lightly greased bowl cover with plastic wrap and set aside in a warm place for 30-40 min. Step 4: after 30-40 mins, take dough out. It should have doubled in size. Put flour on your finger and poke the middle of the dough. If it first bounce back, declare the air from dough and cut in 8 equal pieces. Form in to balls and set aside on a baking sheet for 10-15 mins. Make sure to cover with a lightly dampened cloth. Step 5: cut two areas on the doughball across from each other in a diagonal direction. Egg was the parts you cut in to. Sprinkle with sugar cover them again with a lightly dampened cloth and let them rest for 30 mins - an hour. They will double in size again Step 6: bake in an oven preheated to 400° for 10-12 mins and you're done! Chocolate pudding filling: -2 egg yolks -2 1/2 tbsp sugar -1 tbsp all purpose flour -1 1/2 tbsp corn starch -1 tbsp coco powder -200ml milk (hot) -2 tbsp butter -30g chocolate. I used four squares of semi sweet chocolate Step 1: whisk egg yolks and sugar together. In separate bowl, combine flour, corn starch and coco powder. Add mixture to yolk mixture and whisk together. Step 2: slowly add hot milk to the chocolate yolk mixture. When fully combined. Put yolk mixture through a strainer into a pot. Out put on burner and set to medium heat. Continuously whisk until mixture thickens to pudding consistency. Step 3: take off heat immediately and add butter and chocolate. Continue mixing until chocolate and butter mix in. Step 4: place plastic wrap directly on pudding and put in fridge to cool. After it cools, mix it again and add to piping bag.
Salted Caramel Dark Chocolate Cookies
I can't tell if how much I love caramel should be cause for concern, or if everyone loves that sweet gooey goodness as much as I do. *shrug* What can I say? I know I posted a caramel-stuffed cookie recipe not so long ago, but I saw this one on Sally's Baking Addiction and simply could not resist. Dark chocolate cookies stuffed with caramel, sprinkled with large flake sea salt? Yes please. Oh, and these don't have just any old caramel on the inside. They're ROLOs. Isn't that ingenious?? What you'll need: 1/2 cup (115g) unsalted butter, softened to room temperature 1/2 cup (100g) granulated sugar 1/2 cup (100g) packed dark brown sugar (or light brown sugar) 1 large egg, room temperature preferred 1 teaspoon vanilla extract 1 cup (125g) all-purpose flour (measured correctly) 2/3 cup (58g) unsweetened cocoa powder 1 teaspoon baking soda 1/8 teaspoon salt 2 Tablespoons (30ml) milk 1 and 1/2 cups (270g) Nestlé® Toll House® Dark Chocolate Morsels 16-17 chocolate coated caramels, such as Rolos coarse sea salt 1. In a large mixing bowl, cream butter on medium speed for about 20 seconds. Add sugars and cream together until light and fluffy. Beat in egg and vanilla. 2. In another medium-size mixing bowl, sift together flour, cocoa powder, baking soda, and salt. Gradually add to wet ingredients until combined. Stir in milk, and fold in dark chocolate morsels. Let dough chill for 1-2 hours. 3. Preheat oven to 350°F, and line a baking sheet with parchment paper. To form cookies, take 2 tablespoons of dough, split in half, and stick a caramel in the middle. Roll into a ball, making sure caramel is sealed completely inside. Sprinkle with sea salt before baking. Repeat 16-18 times. 4. Bake for 12-13 minutes. Cookies will still appear somewhat raw, but they will continue cooking after you remove them from oven. Allow to cool on cookie sheet for 5 minutes before carefully removing to wire rack to cool completely. Bake for 12-13 minutes. Cookies will appear undone and very soft. Allow to cool on the cookie sheet for at least 5 minutes before transferring to a wire rack to cool completely. I am making these the SECOND I have some baking time in my schedule. I can't wait. For someone who loves to eat healthy and exercise, I sure can eat a lot of chocolate and caramel... Yield: 24 cupcakes Ingredients 2 cups finely crushed graham crackers (from 16 sheets) 3 Tbsp granulated sugar 7 Tbsp salted butter, melted 4 (8 oz) pkg cream cheese, softened 1 1/2 cups granulated sugar 3 Tbsp all-purpose flour 4 large eggs 2 tsp vanilla extract 1/2 cup sour cream 1/2 cup heavy cream Salted Caramel Sauce or Strawberry Sauce, recipes follow Make a Ginger Turkey Meatball Soup Directions Preheat oven to 350 degrees. In a mixing bowl, whisk together crushed graham crackers with 3 Tbsp granulated sugar. Pour in melted butter and stir mixture until evenly coated. Divide graham cracker mixture among 24 paper lined muffin cups, adding about a heaping Tbsp to each. Press mixture into an even layer. Bake in preheated oven 5 minutes. Remove from oven and allow to cool while preparing filling. In a small mixing bowl, whisk together 1 1/2 cups granulated sugar with 3 Tbsp flour until well blended. Add softened cream cheese to a separate mixing bowl and pour sugar mixture over top. Blend mixture on low speed until smooth. Mix in eggs one at a time and blend on low speed, while scrapping sides and bottom of bowl and mixing just until combined after each addition. Add vanilla, sour cream and heavy cream and mix just until combined. Tap mixing bowl against counter top about 30 times to release some of the air bubbles. Divide mixture among muffin cups filling each cup nearly full. Bake in preheated oven 20 - 23 minutes, centers should still jiggle slightly, don't overbake (if they begin to crack they are starting to become overbaked). Remove from oven and allow to cool 1 hour. Cover loosely with plastic wrap and transfer to refrigerator and chill 2 hours. Serve chilled with a spoonful of Salted Caramel Sauce or Strawberry Sauce (note: for best results spoon topping on just before serving). Store in an airtight container in refrigerator or freeze. Chocolate Chip Cookie Shot Glasses
In honor of National Chocolate Chip Cookie Day, here is a deliciously fun way to get your chocolate chip cookie fix during happy hour: Chocolate Chip Cookie Shot Glasses! And in case you think I am making this holiday up, you can find it , and a ton of other national holidays that will blow your mind at National Day Calendar online. This 4 1/2 star recipe comes from All Recipes user, Nicole Faust Hunt, called "Absolutely The Best Chocolate Chip Cookies." To make the shot glasses, you will need a 'popover' pan. Otherwise, you can make these using small cupcake pans. However, the shape of the glass will not look like a shot glass. Ingredients: 1 cup butter flavored shortening (not butter) 3/4 cup white sugar 3/4 cup brown sugar 2 eggs 2 teaspoons Mexican vanilla extrac t2 1/4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 2 cups milk chocolate chips Chocolate candy melts (for later) Directions: Preheat oven to 350 degrees F. Grease the pan. In a large bowl, cream together the butter flavored shortening, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla .Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, fold in the chocolate chips. Press the cookie dough into the popover pan bottom and sides. Bake for 8 to 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Separately, melt the chocolate candy melts in a microwave or a double boiler. Once the cookie shot glasses have cooled, spoon in the candy melts, covering the bottom and inside cookie walls. This will harden relatively quick, or you can put it in the fridge. This coating will prevent liquids from being absorbed into the cookie. Caramel Stuffed Chocolate Chip Cookies
These look simply incredible. Two of my favorite things, chocolate chip cookies and caramel, combined into one heavenly cookie creation. I was looking for more caramel recipes (because that's what I do in my spare time, duh) when I found this recipe from Table for Two. I mean, can you even imagine anything more perfect?!? Look at that gooey, warm caramel. Those molten chocolate chunks. That perfectly chewy cookie. Imagine how good these are fresh out of the oven. Caramel Stuffed Chocolate Chip Cookies Prep Time: 10 min. Cook Time: 13 min. Difficulty: Easy Recipe adapted from Table for Two Ingredients 3 sticks (1½ cup) unsalted butter, softened 1½ cup dark brown sugar, packed ½ cup granulated sugar 2 eggs 4 tsp. vanilla extract 2 cups all-purpose flour 2 cups bread flour (you may use all-purpose flour instead if you don't have it on hand) 4 tsp. cornstarch 2 tsp. baking soda 1 tsp. salt 1½ cups chocolate chunks ½ cup dark chocolate, finely chopped 18 caramel candies, cut in half to give you 36 Directions 1. Preheat oven to 350°F. Line baking sheets with parchment paper. In a large bowl, whisk together the flours, cornstarch, baking soda, and salt. In another mixing bowl, cream together butter and sugar until fluffy (about 2 mins). Add eggs and vanilla. Beat 2 more mins. 2. Gradually add flour mixture, beating until fully incorporated. Fold in chocolate chips with a spatula. To form the cookies, take a spoonful of dough, and use your thumb to make a small hole and press the caramel into the center. Re-roll the ball to cover the caramel candy. 3. Bake for 11-13 minutes. They may look quite soft at this point, but remember they will continue to cook after you remove them from the oven. White Chocolate Caramel Cheesecake
Caramel Sauce: 1 1/2 cups granulated sugar 1 3/4 teaspoons lemon juice 1 pint heavy cream 4 tablespoons unsalted butter Before I get into making the sauce, let me note that this isn't the easiest way for most home cooks to go about making caramel sauce. Melting almost pure sugar in a pan is pesky and it can burn quite easily. If you're not feeling up to attempting this part of the recipe, feel free to buy your favorite caramel sauce and warm it gently to glaze the cheesecake. In a medium sauce pan over medium high heat (I'm using non-stick for this), combine the sugar and lemon juice. Stir with a wooden spoon until the sugar is mostly melted then set aside the spoon and swirl the pan over the heat to keep the color even throughout. Continue to cook and swirl until it sugar turns a medium amber color. Watch it carefully, the sugar will quickly darken and should it become dark brown or black it will taste bitter and unpleasant. When the sauce turns the right color slowly whisk in the cream. If the caramel hardens with the addition of the cream, do not worry. Just continue to add the cream and bring the mixture back to a a boil over medium heat. Continue to stir until the sugar has remelted. Allow to boil for 5 minutes then remove from heat and stir in the butter. Pour into a heat safe container and chill until ready to use. Crust: 10 ounces graham crackers, crushed into crumbs 7 tablespoons unsalted butter Cheesecake Filling: 3 8-ounce packages of cream cheese, room temperature 1 1/4 cups granulated sugar 1/2 cup heavy cream 8 ounces good quality white chocolate, chopped 5 large eggs 1 teaspoon vanilla extract pinch salt boiling water Pre-heat the oven to 375°F. Combine the graham cracker crumbs with the melted butter and press into the bottom and 1 1/2 inches up the side of a 10 inch spring form pan. Bake for 10 minutes and then allow to cool completely on a wire rack. Reduce the heat to 325°F and prepare the cheesecake batter. Place the chopped white chocolate into a heat safe bowl and set aside. Bring the 1/2 cup of cream to a simmer over medium heat in a small sauce pan. Pour the hot cream over the white chocolate, jiggle the bowl to submerge it and allow to stand for one minute. Stir the chocolate gently until melted completely. In your mixer with the paddle attachment, beat the cream cheese until smooth and lump free. Add the sugar and mix, scraping down the sides of the bowl as needed. On medium speed, slowly add the white chocolate ganache. Once combined you can add the eggs, one at a time, beating on low speed until each egg is incorporated. Once you've added all the eggs, mix in the vanilla and salt and pour into your prepared pan. Set the pan onto a couple large sheets of aluminum foil and smooth them up the sides of the pan to waterproof. Set the cheesecake into a large roasting pan and then place in the oven. Pour the boiling water into the roasting pan, filling to about one inch (no higher than the lowest edge of aluminum foil). Allow to make at 325°F for one hour then reduce heat and bake at 300°F for an additional 60-90 minutes until the center is just set. Remove from the oven and allow to cool completely on a wire rack. Once cool chill for at least 4 hours before serving. To glaze, gently warm the 1 cup of the caramel sauce on the stove or in the microwave until slightly runny and then pour onto the cheesecake. Smooth the caramel over the cake and you're ready to serve. Enjoy.
