INGREDIENTS 1 cup quinoa 1 avocado 1 cup artichoke hearts, sliced 2 limes, zested and juiced 3-4 tablespoons olive oil ½ cup chopped cilantro 3-4 cloves garlic, minced 1 small red onion, diced INSTRUCTIONS Cook quinoa according to package directions. In a small bowl combine lime juice, zest, olive oil and garlic. In a large bowl combine all of the ingredients and toss until mixed.
