Serves 4 1 oz veggie broth, low sodium 1 head large cauliflower 2 cloves garlic, finely minced 2 tbsps vegan parmesan cheese Directions Place the cauliflower in a steamer and steam to desired tenderness. In a bowl, mash the cauliflower with garlic, broth and parmesan, all to taste. Serve warm.

This is one of my faves.
I need recipes like these. I want to eat right now in time for my wedding. Not looking for a phase, but it would be good to be eating better as a normal routine by the time I get married so it's not a struggle as newlyweds
Looks like it'll taste good and I might just make this more regularly in place of mashed potatoes. Seems like it will take less time to prepare.
My mom sprinkles turmeric in mashed cauliflower too for some color and more flavor
Cauliflower has so much more flavor than potatoes anyway :)
