Fried Rice with Pork Ribs (ống thép luồn dây điện imc) is a Vietnamese dish made from rice but not normal rice, which is cracked rice (broken rice). It originates from Saigon and is the most popular dish that locals choose for their breakfast. Today, you can find broken rice in restaurants in most provinces in Vietnam.
Broken rice is often served with grilled pork (or ribs or shredded), egg bread, cucumber, carrots, scallions and vegetables that are accompanied by the preferences of customers and a small bowl of fish sauce, a one bowl soup. Although chopsticks are commonly used, for broken rice, forks and spoons are used to fully enjoy the taste of this dish.

1, Raw materials for preparation
4 medium pork chops
300g broken rice
60g white rice for hearing
100g pork skin
3 chicken eggs
50g lean minced pork

Finely chopped scallions
Vegetables served: tomato , cucumber , carrot , white radish
Spices: honey , fish sauce , monosodium glutamate , salt , oyster sauce , ground pepper , sugar , vinegar .
2, How to cook delicious pork ribs with rice
Step 1: Cook rice
The broken rice purchased is washed 2–3 times and cooked in the rice cooker as usual.
Step 2: Make grilled cutlet rib
Buy cutlet meat, wash and dry with a towel. Next, use a hammer to beat the meat to make the meat thinner and thinner (If you don’t have a hammer, you can also use a regular pestle).
Marinate meat according to the recipe: 5 smashed lemongrass sticks , ½ tablespoon MSG , 1 tablespoon seasoning , 1 tablespoon honey , 2 tablespoons oyster sauce , 1 tablespoon fish sauce , ¼ teaspoon ground pepper , 1 tablespoon minced shallot , 1 tablespoon minced garlic and Cook rice for pureed broken rice. Mix well and marinate the meat for 1 hour .
Grill each piece of meat on the charcoal stove until golden brown on both sides. If you bake in an oven or an oil-free fryer, you can adjust the temperature to 180 degrees C for 30–45 minutes.
Step 3: Making steamed egg rolls
Soak dried black fungus in warm water for 20 minutes to bloom, then wash, cut off the legs and chop. The vermicelli soak for 10 minutes and also take away chopped.
Mix well minced pork, wood ear, and chopped vermicelli . Crack in 2 more eggs and 1 white (1 yolk left to color the topping). Then season with 2 tablespoons of salt, 1 tablespoon of sugar, 1 tablespoon of fish sauce and 1 tablespoon of minced shallot. Mix well to infuse the ingredients evenly.
Put the egg rolls into the steamer for 30 minutes . Then put the remaining egg yolk on the surface and steam for another 10 minutes to finish.
Step 4: Making pork skin
Purchased pork skin is washed and boiled quickly for 15 minutes to keep its toughness.
After taking out, immediately put the pork skin in ice water to keep it crispy. Soak pork skin for 5 minutes and remove to drain. Thinly slice pork skin.
Making hearing : Roast 60g of white rice until it turns golden brown. Let the rice cool completely and put it in a blender.

Finely chopped green onions add ¼ teaspoon of salt, ¼ teaspoon of sugar and mix well.
Cook the cooking oil and add it to the prepared green onions. Mix until the scallions are fully cooked.

Step 7 Prepare fish sauce
Bring to a boil and stir a mixture of 3 tablespoons fish sauce, 3 tablespoons sugar, 3 tablespoons warm water and 1 tablespoon vinegar . Let the mixture cool, then add ½ teaspoon of fish sauce and ½ teaspoon of vinegar , season to taste.
Wash the red peppers, pour cold water just enough to cover the peppers and boil until the peppers are soft.
Use a spoon to grate the chili. Heat 1 tablespoon of cooking oil , add 1 tablespoon of garlic and sauté until fragrant , then add the chopped chili . Add 1 tablespoon sugar, 1 tablespoon vinegar , boil for about 5 minutes, turn off the heat to cool, then add the chili mixture to the cooked fish sauce.
Fish sauce to eat broken rice

3, Finished product
