Almost all of my favorite cookie ingredients in ONE cookie! I love peanut butter and chocolate together, and the oatmeal gives these a little fiber so you're not as likely to get that tremendous sugar rush, then crash, that so many cookies provide.
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/3 cup light brown sugar
1/2 teaspoon vanilla extract
1/2 cup rolled oats
1 cup milk chocolate chips
In the bowl of your electric mixer cream butter, peanut butter, sugar, brown sugar, vanilla together. Add in the egg. Mix until combined.
Mix in flour, baking soda, and salt until combined.
Fold in oats and chocolate chips.
Press into a greased 9x9 baking dish. Bake for 25 minutes or until a tooth pick is inserted and comes out clean.
Allow to cool for 30 minutes before slicing.
