Ingredients: 1 shortcrust pastry (400g) - see the recipe here 3 cups of sweet potatoes pure ( from 4-5 medium size potatoes ) 1/2 cups brown sugar 1/2 teaspoon nutmeg 1/2 teaspoon cinnamon 75g butter (room temperature) 1/2 + 1/2 cups milk 1/4 cup sugar 3 eggs 1 tablespoon vanilla extract Directions: Roll the dough and lay it in a non-stick pan (or use a baking sheet) Mix pure with brown sugar, nutmeg, cinnamon and 1/2 cup of milk. I made the pure using an electric mixer, so all these ingredients were put inside. In a bowl, beat the eggs, add sugar, the other 1/2 cup of milk and the vanilla extract. Pour the pure over the eggs and stir. Pour the mixture in the pie crust and cook in the preheated oven at 190ºC for 1 hour.
