1 pack of instant Ramen noodles 1 organic egg 3 cloves garlic, finely sliced 2 green onions, finely sliced 1-2 tsp minced ginger 2oz bunashimeji (beech mushrooms) 2-3 fresh shitake mushrooms 1 handful of already sliced crimini mushrooms 1 tsp organic light soy sauce Dash of ground white pepper 3 handfuls of organic baby spinach Directions: Cook one pack instant noodles (about 1-2mins), depends on brand/product. When cooked, set aside. Prepare a pan to fry the egg. Set side. Saute all the green onions and 2/3 of prepared garlic (save 1/3 for the spinach) for about 1 min before adding the mushrooms. Add the soy sauce, and white pepper and cook the mushrooms till tender. Dish out, set aside. Saute the remaining garlic, and ginger, then add the baby spinach and lightly stir-fry till cooked. Add in the mushrooms, cooked noodles, and toss well. Serve with fried egg.
