Stroopkoeken is a traditional Dutch cookie that is perfect for cookie sandwiches! Spread some salty caramel all over these little cookies and enjoy! Ingredients 150 gr (1 + ½ cup) flour 80 gr (1/3 cup) sugar 2 tsp cinnamon 110 gr (1/2 cup) butter, in cubes Salted caramel filling 150 ml (2/3 cup) sweetened condensed milk 4 tbsp brown packed sugar 2 tsp coarse sea salt + extra to sprinkle Instructions - Mix flour, sugar and cinnamon together Add the butter and use your hands to knead until you have a dough - Wrap in plastic foil and refrigerate for 1 hour Preheat the oven to 160 C / 320 F - Line a baking tray with baking paper Roll out the dough until it is about 0,3 cm (1/8 inch or a thick coin) thick - Cut out rounds* - Bake in 15 minutes (they stay more or less the same color, that's normal) - Leave to cool Salted caramel - Mix all the ingredients in a sauce pan (with a thick bottom) Let simmer on low heat for 15 minutes, until it thickens - Pour in a clean bowl and leave to cool (it will thicken some more while cooling off) - Use a spoon to put some caramel on the flat side of a cookie - Sprinkle on some extra salt and top with a second cookie
