Apple picking season is here! And, as always, my biggest apple picking predicament is being stuck with three or four full bags of Goldencrips, Pink Ladies, and Braeburns and getting all sorts of 'appled out'. Needless to say, I'm constantly on the hunt for new, easy, and delicious ways to put all of these apples to good use. Here is a delicious recipe (with cinnamony baked apples!) that I got from the staff of my favorite vegan restaurant, Native Foods Cafe, that packs as much nutrition as it does flavor! Pair it with your favorite seasonal hot tea for some perfectly autumnal bliss. -------------------------------------------------------------------- Open-Faced Apple Tahini Sandwich 1 tbsp. peanut, cashew, or almond butter 2 slices of whole wheat or multigrain bread 1 small apple, cored and thinly sliced 1 tbsp. tahini 1 tbsp. maple syrup 1/4 tsp. ground cinnamon 1. Spread peanut butter, cashew, or almond butter onto each slice of bread. 2. Arrange apple slices on top and drizzle with tahini and maple syrup. 3. Sprinkle with cinnamon and transfer to a toaster oven on a small baking sheet. 4. Toast on high until hot and then serve!
I love apples, and this sounds delicious. I haven't used tahini myself, but I think I'll look for it at the store!

I never really thought of using tahini in sweeter recipes like this, but it really is yummy!
