4 Ingredient Gluten-Free Pumpkin Muffins
Get in the autumn spirit with these pumpkin muffins!! Feel free to add the chocolate drizzle ;) Ingredients -1package of King Arthur's Gluten Free Muffin Mix (I'm sure other brands will work!) -1 cup pumpkin puree -3 eggs, large -1/2 cup almond milk, sweetened Optional add ins: 1t-2t pumpkin pie spice, 1/2 cup mini dark chocolate chips Instructions First, preheat oven to 375F and line a muffin tin with paper liners, then lightly spray with nonstick cooking spray (this will prevent the muffins from sticking to the paper liners). In a medium size bowl, whisk eggs. Then add in milk and pumpkin puree and mix again. Next, add in gluten free muffin mix and mix until there are no more lumps. Fill each muffin about 3/4 of the way full. Bake at 375F for 18-22 minutes or until you do the toothpick test and it comes out clean!
