INGREDIENTS 2 tbsp. olive oil 1 onion, chopped 3 garlic cloves, minced 2 cups tomato sauce 1 large red bell pepper, diced 1½ cups cooked or canned brown lentils, rinsed and drained ½ tbsp. sugar 1 tbsp. dried oregano 1 tsp. dried basil ½ tsp. salt ¼ tsp. pepper INSTRUCTIONS Heat oil in a large saucepan over medium-high heat. Add onion and saute until softened, about 5 minutes. Add garlic and saute another minute, until fragrant. Add all remaining ingredients and lower heat to medium. Simmer about 15 minutes, until peppers are tender and sauce has thickened a bit.
