My sister and I tried this recipe out last weekend when we were in pursuit of something fancy to eat for breakfast. It was perfect for our situation - we wanted brunch, but were on a bit of a time crunch! Baked oatmeals are so filling and delicious, and you can easily customize this crème brûlée recipe by swapping out the berries for other flavors like cinnamon, ginger, and vanilla. (My sister even 'DIY'ed her own vanilla cream drizzle with eyeballed amounts of soy creamer, vanilla, sugar, and cornstarch over low heat until thick. It was the best!) ------------------------------------------------------------------- Vegan Crème Brûlée Baked Oatmeal 2 cups water 1 cup old-fashioned oats 1/2 tsp. salt 1 cup unsweetened berries 1/4 cup chopped nuts 1/2 cup dried berries 1/4 cup maple syrup (optional) 2 tbsp. brown sugar 1. Bring the water to a boil and add in the oats and salt. Reduce to a low simmer and cook for 5 minutes. Remove from the heat and let sit covered for 2 minutes. 2. Divide the unsweetened berries, nuts, dried berries, and oatmeal between two ramekins. Top with the maple syrup, followed by the brown sugar. 3. Place the ramekins on a baking sheet and put in the broiler on high for about 5 minutes, making sure that the crème brûlée doesn’t burn. Serve warm.

An awesome way to start the day! I'd have some extra cinnamon and brown sugar ready on the side and I'd be in heaven!
I was actually never a fan of oatmeal until I had it baked. The texture is fantastic.
