One of my favorite dish to bring to a potluck is baked chicken wings. I experiment with different variations over the years and I personally like buffalo wings. The reason I usually go with baking chicken wings is it retains the moisture of the chicken. Frying it is too drying and most of the time it's too oily. i always back mine. if you sprinkle the raw wings with salt and let them rest on a cooling rack for 10min it will give you crisper skin.

@onesmile you can also spray them with non stick cooking spray just before you put them in and when you flip them.i also cook them on a cheap cooling rack with a pan under it to catch the drippings. the hot air circulates under the wings that way...yeah I make alot of wings I'm a new yorker lol
