Make Your Very Own Super Fun Vegan Candy Corn
For the last week of October, I really wanted to start being able to share with you some of my most favorite vegan Halloween recipes. Halloween is by far my most favorite holiday. (New Year's Eve is a close second!) Every year, my sister throws a huge Halloween party, filled with scary decorations, a special Halloween playlist of scary-themed rock songs (a la the Ramones' "Pet Sematary"), and makes tons and tons and tons of delicious and festive vegan finger foods and desserts. Here is a vegan recipe for the ultimate Halloween candy staple - candy corn! Experiment with other extracts to make variations of your own! I would recommend omitting the vanilla extract for lemon for a fun alternative to the traditional candy corn flavor. --------------------------------------------------------------------------------- Vegan Candy Corn 1 cup sugar 2/3 agave nectar 5 tablespoons Earth Balance (or other vegan butters) 1 teaspoon vanilla extract 2 1/2 cups powdered sugar 1/3 cup powdered soy milk a pinch of salt Red & yellow food coloring 1. In a large saucepan, bring the sugar, agave, Earth Balance, & vanilla to a LIGHT boil over high heat. 2. Reduce the heat to medium & boil the mixture for 5 minutes, stirring occasionally. 3. After 5 minutes, remove from heat. DO NOT OVERHEAT, or your dough will be rock hard and completely useless! Sift the powdered sugar, powdered soy milk, & salt into medium bowl. Add the dry mixture to the pan, and mix well. 4. Let the mixture stand until slightly warm to touch, about 20 minutes. Knead until smooth. 5. Prepare a surface of wax paper. Divide the dough into 3 equal pieces. 6. Add several drops of yellow food coloring to one piece of dough & knead food coloring into the dough until smooth and color is even. Repeat using red & yellow food coloring (for orange) with the second piece & leave the last piece white, but knead it until smooth. 7. Roll each piece into ropes of equal length (don’t roll too thin or the dough will break) and push the three ropes together to form a long rectangle. 8. Using sharp knife, cut the ropes into triangles.
