This recipe was shared with me by one of my dearest Vingler friends @nineincher, and I am seriously sold on how assembling this adorably spooky Halloween snack is equal parts simple and crafty. (I bet it would even be fun to invest in a nice red candy decorating pen to make these pretzel screamers' eyes a little bloodshot!) The original author of this recipe suggests using Enjoy Life brand chocolate and chocolate chips, but in my experience, I feel like Ghiradelli chocolate chips are one of those "I can't believe this is vegan!" products that are probably twice as easy to find. (I'd imagine swapping chocolate for carob in this recipe would be pretty doable too.) Happy Haunting! --------------------------------------------------------------- Dark Chocolate Pretzels with Googly Eyes To Make Googly Eyes: 1 cup powdered sugar 1 tsp. cornstarch 1 tbsp. corn syrup 2 tsp. nondairy milk 1/4 tsp. almond extract (or vanilla extract) Mini non-dairy chocolate chips 1. Whisk together the powdered sugar and cornstarch. Add the remainder ingredients except for the chocolate chips and mix until combined. It should be a thick paste at this point. 2. Place into either a piping bag or Ziploc baggie and pipe dots into one row onto a baking sheet lined with wax paper. Gently top each dot with the mini chocolate chip--you don't want to wait too long to place the chocolate chip in the middle or it will set. Repeat until all the paste is gone. 3. Allow the googly eyes to set for at least 24 hours on your counter. To Make Pretzels: 20 pretzels 1/2 cup dark chocolate, melted 40 pre-made googly eyes 1. Dip each pretzel into the melted chocolate. Place two googly eyes in their spot. 2. Freeze for 15 minutes or until set. Enjoy!
