This recipe is definitely going to be my go-to breakfast choice this Halloween. My favorite part about this recipe is that the green 'zombie juice' doesn't get its color from food coloring, but a nice handful of raw spinach heavily flavor-masked by bananas, cinnamon, coconut milk, and maple syrup. Yum! ---------------------------------------------------------------------- Vegan Zombie French Toast 4 large pieces of bread (or 8 smaller pieces) 1 1/2 bananas A handful of spinach 1-2 tbsp maple syrup Dash of cinnamon 1/2 cup of coconut milk (or other non-dairy milk) Powdered sugar for garnish Non-stick cooking spray 1. In a blender, blend together the banana, spinach, coconut milk, cinnamon, and maple syrup. 2. Heat up a pan and spray on the cooking spray. 3. Take a piece of bread, dip it in the ‘zombie juice’, and heat in the pan for approximately 3 minutes each side (depending on the thickness of the bread). 4. You will have some zombie juice left over; once all of the bread is cooked, pour some over top for that extra ‘pop’ of green. 4. Finish with a garnish of powdered sugar and some extra zombie juice on the side.

I feel like parents could use this to trick their kids into eating spinach for breakfast just because of the "zombie juice" hahaha

@flymetothemoon That's a really good point! This is almost like the sauce equivalent of those green juices that people pitch as the ones that will make your kids drink vegetables!
