How To Make Your Own Za'atar, the Middle East's Favorite Blend of Spices
Za'atar is a blend of spices used in a majority of Middle Eastern dishes. It is used to make za'atar manakesh (show in the picture), paired with greek yogurt for a nice breakfast mazza, even sprinkled on kabobs to add unique flavor to roasted chicken, vegetables, and fish. Authentic za'atar recipes are hard to come by. This is a spice that is traditionally made at home and taught from generation to generation, so it tends to slightly fluctuate in flavor from region to region. Here, however, is a pretty true-to-taste Lebanese style za'atar recipe, which is probably the most popular variety. You could cheat and simply buy a bag of premade za'atar at the store, but za'atar tastes best when it's prepared fresh at home! --------------------------------------------------------------- Za'atar 1 cup of dried thyme 1/4th cup of dried marjoram, optional 3/4th cup of ground sumac spice 3/4th cup of sesame seeds 1/2 teaspoon of cumin 1/2 teaspoon of coriander 1/2 teaspoon of shumar (ground fennel) 1/2 tablespoon of ground anise 1/2 tablespoon ground cinnamon 1/2 tablespoon of salt (or to taste)
