Vegan (And Gluten-Free!) Corn Dog Mummies
How cute are these mummies? I love how these give you a little more sustenance compared to most Halloween-themed party recipes, plus the ingredients are extremely mindful of guests with dairy, egg, and gluten sensitivity. The recipe calls for veganaise as the mummy 'wrapping' on the outside, but I bet it could also be replaced with a lot of other condiments of different colors for a very similar effect. I would recommend ketchup, barbecue sauce, and even creamy vegan sauces like french onion, ranch, or dijon mustard. (I think so long as the pattern remains similar to a mummy's bandage wrapping, your guests will totally get the point.) ---------------------------------------------------------------- Vegan and Gluten-Free Corn Dog Mummies 1/2 cup corn meal 1/2 cup gluten-free all purpose flour mix 1 tbsp sugar 1/2 tsp salt 1/2 tsp baking powder 1/2 tsp baking soda 1/2 cup non-dairy milk + 1/2 tbsp apple cider vinegar 2 tbsp oil 3 tbsp cornstarch (for coating) 4 vegan tofu pups 4 lollipop sticks Vegetable oil for frying (approx. 2 quarts) 1/2 cup Veganaise 'mayo' (placed in a squeeze bottle) Mustard (for the Mummies' eyes) Small googly eyes, optional 1. Heat oil in a deep fryer or in a pot until it reaches 350°F. 2. Roll each hot dog in cornstarch, creating a thin layer to coat prior to dipping into batter. 3. Place a stick into each of the hot dogs and set on a plate. 4. Combine corn meal, flour, salt, baking soda and powder. 5. Add vegan milk/vinegar and oil to dry ingredients, mix. 6. Dip each hot dog on a stick into the batter. Place into hot oil and cook 3 minutes or until nicely browned. 7. Place on a paper towel-lined plate to soak up excess oil. 8. Using the squeeze bottle filled with Veganaise, create lines on the corn dogs like mummy bandages. 9. Squirt mustard for the eyes, and adhere googly eyes to the dots of mustard (optional).
