Toasted Curry Pumpkin Seeds
Pumpkin seeds are my favorite fall snack. With all the pumpkin carving this Halloween, you can bake those seeds and turn them into a healthy treat. Ingredients: 2 tablespoons unsalted butter, melted 1 tablespoon curry powder 1/2 teaspoon kosher salt Pinch cayenne pepper 1 cup raw pumpkin seeds Instructions: 1. Preheat the oven to 375 degrees F. 2. Combine all the ingredients in a bowl and mix well. 3. Place on a baking sheet and cook for 4 to 7 minutes, stirring halfway through, until golden brown. 4. Remove from the oven and cool. 5. Serve or store in an airtight container.

I've had toasted pumpkin seeds before but I've never really strayed from the salt and pepper seasoning. I will give this a go!

This is such an easy adjustment, but I bet it makes a world of a difference. I'm totally making these when I carve pumpkins this week.
