A hearty and light breakfast always brighten up my day. On a typical day I usually make Irish oatmeals, but sometimes good old fashioned oats does the trick. This recipe is taking from "The Homemade Flour Cookbok" recreated by Adrianna of "A Cozy Kitchen." To make it my own I like adding a few chia seeds to the porrdige. Ingredients: 1/4 flaxseed meal 1 cup old fashioned oats 2 1/4 cup whole milk 2 teaspoons brown sugar 1/4 teaspoon ground cinnamon Pinch ground ginger Pinch salt 1 peach Cooking spray 1 teaspoon honey 1. In a medium saucepan, whisk together the flaxseed meal, oats and milk. Bring to a boil, then reduce the heat to a simmer, whisking frequently. Cook the porridge until thick, 4 to 5 minutes, and add more of the milk to thin the porridge, if desired. Mix in brown sugar and spices: ground cinnamon, ground ginger and salt. Turn the heat to very low while you prepare the peaches. 2. Meanwhile, heat a grill pan over high heat, spray with cooking spray. When the grill pan is very hot, add the peaches and cook until grill marks appear and the peaches are slightly softened. Serve the peaches over flax and oat porridge with a drizzle of honey.
