I was inspired to post this recipe after my sister whipped up some amazing vegan pesto pizzas this weekend. She used Gardein vegetarian chicken, homemade pumpkin seed pesto finished off with even more deliciously roasted seeds on top! You can use this recipe to make your very own pesto pizza at home, pour it over pasta, or (as I love to do with pesto) spread it in a toasted panini! ----------------------------------------------------- Pumpkin Seed Pesto Pasta 1 cup pumpkin seeds, lightly toasted 1 cup fresh parsley leaves, firmly packed 2 cloves garlic 2 tsp. miso 1/4 tsp. sea salt 1/4 cup olive oil 1. Combine pumpkin seeds, parsley and garlic in a food processor until minced. 2. Add miso and salt and process until well-blended. 3. While blending, slowly drizzle in the olive oil.
This sounds like an awesome way to use all the pumpkin seeds I bought last month hahah
I like the idea of roasted seeds on top of the pasta too! Nom nom nom.
