Ijee, A Simple And Healthy (But Flavorful!) Middle Eastern Omelet
One of my favorite things about a lot of Middle Eastern recipes is that some of the healthiest recipes can also be some of the most flavorful. (It's no wonder why some doctors swear by the health benefits of a Mediterranean diet!) Ijee, the standard Arabic omelet, is one of these recipes. Once you try it, I guarantee you're going to be sitting there thinking "Seriously, how can something so simple and healthy be SO delicious?" Try it the next time you want to take a little break from your everyday omelet. (Also, be sure to check your teeth after breakfast. This recipe packs a whole lot of parsley!) ---------------------------------------------------- Ijee (Arabic Omelet) 6 eggs, slightly beaten 4 tbsp. parsley, chopped 1/2 bunch green onions, chopped 4 tbsp. butter or margarine (or a pan spray of choice) 1 tbsp. fresh mint, chopped (or 1 tsp. dried mint) Salt and pepper to taste 1. Mix all ingredients except butter. Place 1 1/2 tbsp. butter (or a layer of pan spray) in pan and heat. 2. Drop 1/2 of the mixture in a skillet. 3. When set, turn omelet on the other side. Fry until fully cooked. 4. Repeat with the rest of the mixture to yield 2-3 omelets.
