There is nothing like a perfectly homemade tomato soup for a cold winter night. Grab some grilled cheese or croutons and enjoy! Ingredients~ 2 TBSP Oil 2 Medium Onions 5 Cups Chopped Tomatoes 1/4 tsp Chili Powder 1/2 tsp Cumin 1 Clove of Garlic, minced 1/3 Cup Quinoa 1/4 tsp Smoked Paprika Salt/Pepper, to taste 3 Sprigs of Fresh Thyme In a medium sized pot, heat the oil on medium before adding the onions. Cook for 5-7 minutes to allow them to soften before adding the chopped tomatoes. Add the chili powder, cumin, garlic and smoked paprika. Simmer and stir frequently for 20 minutes. Meanwhile, heat a large pan on high and add the quinoa. Toast for several minutes moving constantly until some of the seeds begin to pop. Move quinoa into a bowl and let it sit until ready to add to the soup. After cooking the tomatoes for 20 minutes add in the quinoa. Season with salt, pepper and toss in thyme sprigs. Cook for 20 minutes until the quinoa is cooked through. Serve and enjoy!
