The Ultimate Vegan Vanilla Cupcake

Ingredients For the cake 1 1/3 cup flour 3/4 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 3/4 cup granulated sugar 2 tsp pure vanilla extract 1/3 cup canola oil 1 cup non-dairy milk 1 tsp apple cider vinegar For the Frosting 1 or 1/2 cup stick earth balance buttery spread 1/2 vegetable shortening 2 tsp pure vanilla extract 1/4 cup non-dairy milk 3 1/2 cup icing sugar Directions Preheat oven to 325 degrees. Line cupcake pan with cupcake liners and set aside. Combine milk and apple cider vinegar and set aside. Whisk together sugar, vanilla and canola oil, add apple cider and milk mixture. Add remaining ingredients and whisk till smooth. Using a 1/4 cup measuring cup portion batter into cupcake liners and bake for 20-25 minutes until an inserted toothpick comes out clean. To avoid uneven cupcakes rotate pan half way through baking time. Cool cupcakes on wire rack until completely cool before frosting. For the frosting with a hand or stand mixer beat together earth balance and shortening until creamy. Beat in icing sugar and vanilla. Add milk one tbsp at at time until desired consistency.

Gorgeous Valentines Day Baked Apple Roses!
Beautiful? Check. Easy to make? Check. Healthy? Hey, they're better for you than a box of chocolates. For a sweet homemade Valentines Day dessert, try something new – these surprisingly simple baked apple roses! To make 6 roses, you'll need: A muffin tin 4 apples, cored and sliced in half (leave the skin on) Juice of half a lemon 3 Tbsp fruit preserves (apricot, apple, strawberry – choose your fave!) 2 Tbsp water (plus more, for soaking apples) 1 sheet of store-bought puff pastry Cinnamon, to taste To see how to make them, check out the video below, or just follow these simple written instructions! Instructions adapted from Tip Hero! How to Make Apple Roses These delicious baked apple roses are a perfect way to impress your Valentine. Or woo them any day of the year! 1. Preheat the oven to 375 degrees F. 2. Take halved, cored, unpeeled apples and carefully slice very thin (see how in the video above). Put slices in a microwave safe bowl and cover with water. Add the juice of half a lemon. Microwave for 3 minutes to soften the slices and make them more pliable for rolling up. 3. In another bowl, mix together 2 tablespoons of fruit preserves and 3 tablespoons of water. 4. Roll out puff pastry and slice into rectangular strips about 2 inches (or a little less) wide. (Again, the video has better details on this part.) 5. For each strip, spoon a little of the fruit preserve mixture onto the dough and spread. Place apple slices overlapping along the length of the dough. Sprinkle with a little cinnamon and fold pastry dough up over apples. Loving this fabulous pudding idea for that post-nuptial brunch this year! It's incredibly healthy, fresh and will satisfy to the nth degree! Oh, and it's completely "Gluten-Free, Dairy-Free, Vegetarian, Vegan, Nut-Free, Paleo-Friendly, and Refined Sugar-Free!," which comes from Robyn's website, RealFoodWholeLife. I discovered it through one of the wedding caterers that I follow on Insta and immediately fell in love! Even if you're not planning a wedding--yours or someone else's--this recipe is going to help you stay fit and inspire you to live more healthy! Chia Seed Pudding ½ cup full-fat coconut milk (from a can) 1 ½ cups unsweetened non-dairy milk 6-7 tablespoons chia seeds 1 teaspoon freshly grated ginger 1 teaspoon pure vanilla extract 1-3 teaspoons pure maple syrup, to taste Grapefruit Topping 2 large grapefruits, cut into segments ¼ cup toasted, unsweetened, flaked coconut Instructions 1. In your favorite mixing bowl, whisk together the coconut milk, non-dairy milk, chia seeds, ginger, vanilla, and maple syrup. 2. Cover and refrigerate for at least 2 hours to set up, whisking every so often. Adding chia seeds, one spoonful at a time, will help thicken it more if you need. 3. Faking It On Valentine's Day
Here's a really cool idea for Valentine's Day: FAKE IT! For real! Guys can be either really lazy about V-Day or over-think it and determine to learn new skills, such as cooking, on one of the biggest hyped calendar dates in the year, February 14th. That's probably not the best approach to making the date night more than being memorable for being bad. Instead of trying to bake a cake or cookies, or dare yourself into making fudge, you could avoid a messy crisis and make your own Chocolate Dipped Strawberries. TRUST ME, IT'S EASY! You Will Need: Strawberries (washed and thoroughly dried) Candy Melts (pink and white) Chocolate chips (semi-sweet is best) Edible gold Edible glitter Edible embellishments (there's time to order from Amazon) Directions Melt the Candy Melts and chocolate (according to the package) in their own container/bowl. Dip strawberries into desired bowl and set aside. Drizzle a different color "melt" onto the dipped strawberries. Also, redip the strawberries in another "melt" at the tip and immediately dredge in edible glitter. Set these in a tray in the fridge and take out to de-chill a few moments before eating. These are fruity, gently sweetened with the chocolate and melts, and will look AMAZING with the edible embellishments!
